Baked Pulled Pork Taquitos

Craving taquitos? Try this baked version with leftover pulled pork. A delicious and healthier alternative to deep-fried taquitos.
I was in the mood for some taquitos and had a bunch of leftover pulled pork so I figured why not? I wasn’t in the mood to pull out my deep fryer so I decided to bake the taquitos instead.
While not authentic it is a little healthier than deep frying them in oil. That being said, you can use the same recipe and deep frying them instead of baking them.
Taquitos vs Flautas
The main differences between flautas and taquitos are that flautas are made with burrito-sized flour tortillas while taquitos are usually made with smaller corn tortillas.
Tips
- I suggest slightly heating the tortillas before adding the filling and rolling them. This will prevent them from cracking
How to Soften Tortillas
When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350ยฐF. You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.
Gather your Ingredients
You will need the following ingredients to make this Pulled Pork Taquitos recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Sour Cream – I like Daisy (no affiliation) brand but you can use any brand you want
- BBQ Sauce – Use your favorite brand and flavor. I like Sweet Baby Ray’s BBQ Sauce
- Chili Powder – Optional but you can also use more or less to taste
- Pulled Pork – You can make your own Pulled Pork or packaged pulled pork
- Mexican Blend Cheese – You can also use Colby Jack or Cheddar Cheese
- Corn Tortillas – You can use yellow or white corn tortillas up to 6 inches in diameter
How to Make Pulled Pork Taquitos
- Preheat the oven to 400ยฐF.
- In a mixing bowl, combine the sour cream, BBQ sauce, and chili powder.
- Fold in the cheese and pulled pork.
- Lay each tortilla flat on a work surface and add about 1/4 cup of the pork mixture in the center, lengthwise.
- Roll the tortillas up tightly and place them seam-side down on the baking sheet. Repeat with all tortillas.
- Brush the tops of the tortillas lightly with olive oil (or cooking spray).
- Cook for 15-20 minutes or until the edges of the tortillas have turned a golden brown.
- Optionally serve with extra BBQ sauce, sour cream and/or salsa for dipping.

These are so good for baked. They are a little harder to roll and keep the shape, but they are well worth it for the baked goodness of something that is usually deep fried. Thank you for this!
