Indian Gardens Meatloaf

This Gourmet Indian Gardens Meatloaf is a savory but still easy to make Meatloaf. Three kinds of meat and a great glaze makes this Meatloaf!

I first encountered this Indian Gardens Meatloaf recipe on a trip to the Grand Canyon. I had the opportunity to have it at a local restaurant and swore I would try and make it someday.

Meatloaf has been around forever. At one end of the spectrum, you have your basic meatloaf recipe, which is no more than a hamburger in the shape of a loaf (and maybe some seasoning if you are lucky).

But on the other end of the spectrum, we have what I would call Gourmet Meatloaf recipes. This recipe falls into the Gourmet Meatloaf category.

What makes this a Gourmet Meatloaf is we use 3 different kinds of meat, vegetables, bread as well as various spices and we top it off with an awesome brown sugar sauce.

You may have a hard time finding ground veal so you can simply substitute for an equal amount of ground pork.

Ground pork is usually made from pork shoulder or pork butt. Sometimes a little pork loin is included.

When baking your meatloaf, you have a couple of options. You can bake it the traditional way in a loaf pan or bake it on a foil-lined baking sheet.

Depending on how lean your ground beef is, you may find the meatloaf sitting in grease. One way to avoid this is to shape the meat mixture into the shape of a loaf and bake it on a baking sheet. This will allow the grease to run off into the pan.

Our friends over at the USDA recommend an internal temperature of 160°F. This should be enough to kill salmonella.

You can take the meatloaf out of the oven at around 150°F and let it rest for 10 minutes. Check the internal temperature again before slicing & serving.

How to Handle Raw Beef

  • Thaw raw ground beef on a plate on the lowest shelf of the refrigerator, to avoid dripping onto other foods.
  • Keep raw and ready-to-eat meats separate.
  • Wash hands thoroughly before and after handling raw ground beef. Wash cutting boards, bowls, and utensils used to prepare raw ground beef with hot soapy water and rinse well.
  • Use separate plates to carry raw ground beef patties to the cooking area and cooked patties to the serving area.
  • Use a Thermometer to ensure Ground Beef Reaches the Safely Cooked Internal Temperature of 160°F.

You will need the following ingredients to make this Indian Gardens Meatloaf recipe (see recipe card for quantities): Ground Beef, Ground Pork, Ground Veal, Yellow Onion, Celery Stalks, Salt, Ground Black Pepper, Ground Dry Mustard, Poultry Seasoning, Bread, Milk, Eggs, Worcestershire Sauce and Bread Crumbs

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the ground beef, ground pork and ground veal.
  3. Add the onion, celery and seasonings.
  4. Soak the bread cubes in milk. Add the eggs and Worcestershire sauce to the bread mixture and beat.
  5. Combine the meat and egg mixtures and form into two loaves.
  6. Roll the loaves in the bread crumbs and place in a greased baking pan.
  7. Combine all brown sugar sauce in small bowl and mix well.
  8. Spread brown sugar sauce over the top of each loaf. Place pan in larger pan.
  9. Pour about one inch of water in the outside pan and bake uncovered for one hour or until the internal temperature reaches 160°F.

Ingredients
 

MEATLOAF INGREDIENTS

  • 1 lb Ground Beef
  • ½ lb Ground Pork
  • ½ lb Ground Veal
  • ½ Cup Yellow Onion, chopped
  • ¼ Cup Celery Stick, chopped
  • 2 Tsp Salt
  • ¼ Tsp Ground Black Pepper
  • ¼ Tsp Ground Dry Mustard
  • ¼ Tsp Poultry Seasoning
  • 4 Slices of Bread, cubed
  • 1 Cup Milk, warm
  • 2 Eggs, beaten
  • 1 Tbsp Worcestershire Sauce
  • ½ Cup Bread Crumbs

BROWN SUGAR SAUCE INGREDIENTS

  • 3 Tbsp Light Brown Sugar
  • ¼ Cup Ketchup
  • ¼ Tsp Ground Nutmeg
  • 1 Tsp Ground Dry Mustard

Notes

→ If you are not a fan of veal, you can substitute with 1/2 lb more ground pork.
→ Contrary to popular belief, a whole head of celery is called a stalk and a single “stick” from the stalk is called a rib. Since most call a rib of celery “stalk”, I use the term Celery Stick to try and avoid any confusion.

    This Indian Gardens Meatloaf is very tasty and moist. I was not able to find the veal so I doubled up on the pork. The. Celery in the recipe just gives the meatloaf that extra flavour.
