    💭 How to cook Lentils

If you are not sure how to cook lentils, rinse the lentils with water then place them in a saucepan with enough water to cover the lentils by 2-3 inches. Bring to a boil, then reduce heat to medium and let simmer until tender, about 25-30 minutes.

Since this Lentil Taco recipe calls for 2 cups of cooked lentils. You will need approximately 1 cup of dry lentils to yield the 2 cups of cooked lentils. Usually, lentils double in size once cooked.

I suggest a white onion for this taco recipe but you can use a different kind of onion if it's more convenient for you. Here's an article on Choosing the Right Onion that might help as well.

As with most taco recipes that I publish, the toppings listed on the recipe card are some of my favorite. You can use some, none or all of them. Use whatever sounds good to you!
