I made these Roasted Garlic Green Beans as a veggie side for Thanksgiving Dinner this year. I usually make my Honey Garlic Roasted Carrots but wanted to try something different this year.

Growing up my mom used to make green beans every week. As a kid there was no way I was going to eat them. The most I could stomach was cream corn.

Fast forward to today. These are not your mom’s green beans recipe. These beans are packed full of garlic flavor and the roasted pine nuts elevate the flavor of these green beans to a whole other level.

A word of caution before you jump into this recipe. Pine nuts can be pretty expensive. I’ve paid as much as $17 a pound for them. Thank God this recipe does not need more than 1/2 cup.

The simplest way to toast pine nuts is to add them to a small dry skillet (no oil) and over medium-low and cook them, stirring occasionally, for about 3 minutes. The pine nuts should be golden brown. Watch them carefully as they can easily burn.

The only challenging part with this recipe is making sure you don’t burn the butter, garlic or pine nuts when cooking them in the skillet. If the butter starts turning brown you’ve overcooked them.

Roasted Garlic Green Beans

You will need the following ingredients to make this Roasted Garlic Green Beans recipe (see recipe card for quantities): Green Beans, Butter, Garlic Cloves, Pine Nuts, Salt and Ground Black Pepper.

  1. Bring a large pot of water to a boil. Add green beans and cook until tender, approximately 4 to 5 minutes. Drain water and set aside.
  2. In a large skillet, heat butter. Add garlic and pine nuts and sauté for three minutes or until pine nuts are lightly browned. Transfer green beans to skillet, add salt and pepper and toss until coated.

Ingredients
 

  • 1 lb Green Beans, trimmed
  • ¼ Cup Unsalted Butter
  • 3 Garlic Cloves, minced
  • ½ Cup Pine Nuts, toasted
  • ¼ Tsp Salt
  • ¼ Tsp Ground Black Pepper

Instructions
