Here’s another fabulous gourmet Bacon Pesto Guacamole for you to try. I am told this guacamole is almost as good as my Blue Cheese Guacamole which I have yet to publish on this blog. UPDATE: Here it is: Blue Cheese Guacamole.

I really do like this guacamole. Not because it has bacon in it either. We all know that bacon makes everything taste better? I think the Pesto and avocado combination is what makes this a delicious guacamole.

Choosing the wrong avocado will ruin your dish. Especially when the avocado is the main ingredient like in Guacamole. Basically, you want a perfectly ripe Avocado. This is a great article on how to select the perfect avocado.

Just like I’ve done for some of my other recipes, I wanted to know the history of Guacamole so I consulted the all-knowing Wikipedia and found this article.

You will need the following ingredients to make this Bacon Pesto Guacamole recipe (see recipe card for quantities): Avocados, Roma Tomato, Red Onion, Fresh Cilantro, Lime Juice, Basil Pesto, Garlic Powder, Salt and Bacon.

  1. Peel, Pit and mash 3 of the avocados in a large bowl.
  2. Add the tomato, onion, cilantro, lime juice, basil pesto, garlic powder and salt to the bowl and stir to combine.
  3. Add more lime juice or salt to taste.
  4. Dice the remaining avocado and fold it in, along with the crumbled bacon, into the bowl of guacamole.

  • Bowl for Mixing

Ingredients
 

  • 4 Avocados
  • 1 Roma Tomato, Diced
  • ½ Cup Red Onion
  • ¼ Cup Fresh Cilantro, Chopped
  • 2 Tbsp Fresh Lime Juice
  • â…“ Cup Basil Pesto
  • ½ Tsp Garlic Powder
  • ¼ Tsp Salt
  • 1 Cup Bacon, Cooked & Crumbled

Instructions
