Banana Bread Muffins with Chocolate Chips

I love Banana Bread. I love it so much that I’ve posted quite a few Banana Bread recipes in the past. While I could’ve made a regular loaf this time around, I decided to make these Banana Bread Muffins with Chocolate Chips as we were headed out on a road trip and it’s much easier to eat a muffin while driving than a big slice from a loaf. At least that’s my excuse.

Now I don’t want to get into the debate of nuts or no nuts in Banana Bread but this recipe yields about 24 muffins. So I decided to make half with nothing in them and the other half with chocolate chips.

Prefer nuts to chocolate chips, an easy substitute. For me though, there is something about the flavor of bananas and chocolate that is simply irresistible.

Next time I might make mini muffins. Can you imagine bite-size Banana Bread treats? The problem is I would probably eat too many and make myself sick. It wouldn’t be the first time!

I would also like to suggest you give my Chocolate Chip Loaf recipe a try. This is a favorite for family and friends.

The best bananas for banana bread are when they are overripe, not yellow but black. Or they’re at least streaked with black/brown. The darker the better.

If you can’t find overripe bananas, you can speed up the process by putting the bananas in a paper bag along with an apple and loosely folding down the top. The bananas should ripen in just a day or two using this method.

Ripe Bananas

You will need the following ingredients to make this Banana Bread Muffins with Chocolate Chips recipe (see recipe card for quantities): Vegetable Oil, White Sugar, Eggs, Bananas, All Purpose Flour, Whole Wheat Flour, Salt, Lemon Juice, Baking Soda and Semi-Sweet Chocolate Chips.

  1. Preheat oven to 350°F.
  2. In a large bowl, combine vegetable oil and sugar. Add beaten eggs and mashed bananas and set aside.
  3. In another bowl, mix together flour, salt, stir and stir into oil mixture. Add lemon juice and baking soda. Fold in chocolate chips.
  4. Spoon into paper-lined cups filling 2/3 full. Bake for 25 minutes.

Ingredients
 

  • 1 Cup Vegetable Oil
  • 1 Cup White Sugar
  • 2 Eggs, Beaten
  • 3 Ripe Bananas, Mashed
  • 1 ½ Cups All Purpose Flour
  • ½ Cup Whole Wheat Flour
  • ½ Tsp Salt
  • 3 Tbsp Fresh Lemon Juice
  • 2 Tsp Baking Soda
  • 1 Cup Semi-Sweet Chocolate Chips

Instructions

    Absolutely delighted to make these muffins and for them to actually turn out so good,nade a slight change wit 1 cup all purpose flour and 1 cup of wholemeal also put half chocolate chips and half chopped walnuts and ive been making them since,ideal for to throw in the freezer and take out what you want when you want them.great recipe

    I made these muffins today and they were just perfect. The only change I made was no chocolate chips and no nuts. I added raisins instead as I love raisins, and do not like nuts. They turned out perfect. They were very moist and I must say, my bananas were darker than the picture shown. Will keep this recipe for sure.
