Grilled Corn & Chicken Soup

This Grilled Corn & Chicken Soup is a wonderful creamy soup. Just make sure you don’t burn the corn! A great soup for those cold winter days.

I had this Grilled Corn & Chicken Soup recipe saved on my computer for the longest time. I don’t exactly recall where I found it but was a big hit with the family when I first made it. How can you go wrong with corn, chicken, cheese, and BACON?

While this soup recipe is not terribly difficult to make, just make sure you don’t burn the corn. I got distracted once and burnt the corn. The soup did not taste good at all with burnt corn!

If you want to take the easy way out, you can use corn out of a can. Not quite the same as grilled corn but still a good soup.

There are several different ways to grill corn, with the husks, without the husks, or wrapped in foil. For this recipe, I remove the husks, rub a little olive oil on the cob and put them directly on the grates for 10-15 minutes.

How to Handle Raw Chicken

  • Leave the chicken in the fridge until ready to use.
  • Be careful of dripping juices. Clean up immediately.
  • Do not wash raw chicken (prevents cross-contamination).
  • Wash all utensils and cutting boards.
  • Wash your hands after handling raw chicken.

An alternative to using chicken broth is Better Than Bouillon. I often use it when I don’t have broth on hand.

You will need the following ingredients to make this Grilled Corn and Chicken Soup recipe (see recipe card for quantities): Corn, Unsalted Butter, All Purpose Flour, Heavy Cream, Whole Milk, Parmesan Cheese, Low Sodium Chicken Broth, Chicken, Bacon, Green Onions and Salt & Pepper.

  1. Grill the corn on a cooktop or BBQ. Remove the kernels from the cobs with a knife.
  2. Melt the butter in a saucepan and add the corn. Season with salt & pepper. Once the corn is soft, add the flour to the corn in the saucepan.
  3. Add the heavy cream to the saucepan and mix well. Once the corn mixture thickens, remove half of the corn and puree in a blender.
  4. Put the pureed corn back in the saucepan and add the milk, chicken broth and cheese. Mix till well combined.
  5. Add the chicken and bacon to the corn mixture and mix well.
  6. Serve in bowls and optionally garnish with green onions.

Ingredients
 

  • 6 Fresh Corn on the Cob
  • 3 Tbsp Unsalted Butter
  • Salt and Pepper, to taste
  • 1 Tbsp All Purpose Flour
  • 1 Cup Heavy Whipping Cream
  • 1 Cup Whole Milk
  • ½ Cup Parmesan Cheese, shredded or grated
  • 1 Cup Low Sodium Chicken Broth
  • 1 Cup Chicken, cooked & diced
  • 1 Cup Bacon, cooked & diced
  • ¼ Cup Green Onions, diced (optional)

    This soup is real comfort food. Love soup on a cold winter night for dinner. I have made it a few times now and it is always a hit. A great way to use up leftover chicken.
