|1 lbs Ground Beef|
|16 oz Cooked Macaroni|
|1 Cup Diced Yellow Onion|
|2 Tbsp Chili Powder|
|1 Tbsp Ground Cumin|
|2 Tsp Salt|
|15 oz Drained Black Beans|
|15 oz Drained Sweet Corn|
|8 oz Salsa|
|8 oz Sour Cream|
|12 oz Shredded Mexican Blend Cheese|
Preheat oven to 350°F.
In a skillet over medium high heat, brown the ground beef and onions with a little bit of olive oil. Drain the grease from the cooked meat.
Add the chilli powder, cumin, and salt to the meat mixture along with 1/2 cup water. Bring to a boil, then reduce to a simmer and continue to cook for 5 to 6 minutes or until the mixture has thickened.
In a large mixing bowl, add the ground beef mixture, cooked macaroni, black beans, sweet corn, salsa, sour cream and 2 cups of shredded cheese. Mix thoroughly.
Add the mixture to a greased 9 x 13 dish and cover with foil.
Bake for 30 minutes covered.
Remove foil and add the remaining cheese. Bake for another 15 minutes uncovered.
