Rod’s Baked Western Omelet

This Delicious Baked Western Omelet casserole dish was a family favorite when growing up. My dad made western omelets every Christmas morning for us.

I built upon his recipe and created this baked version. My family loved it so much that I wanted to share it with all of you!

This breakfast recipe is so versatile that you can easily substitute some of the ingredients to suit your tastes. Don’t like bell peppers? Just don’t add them. Love bacon? Go ahead and load it up. No matter what you add to this omelet it will be delicious!

One of my favorite variations of this recipe is to substitute the bell peppers with canned green chilies and Mexican Blended Cheese instead of the Cheddar Cheese.

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

You will need the following ingredients to make this Baked Western Omelet recipe (see recipe card for quantities): Eggs, Milk, Salt, Bacon, Cheddar Cheese, Yellow Onion, Green Bell Pepper, Red Bell Pepper, Diced Tomatoes, Black Olives and Sour Cream.

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, beat the eggs, milk and salt together. Stir in bacon, cheese, onion, bell peppers, tomatoes and olives.
  3. Pour the egg mixture into a lightly greased 9 x 13 baking dish.
  4. Bake for 45 minutes or until the eggs are cooked and the omelet is set.

Ingredients
 

  • 12 Eggs
  • 1 Cup Milk
  • ½ Tsp Salt
  • 1 lb Bacon, cooked & chopped
  • ½ Cup Cheddar Cheese, shredded
  • ½ Cup Yellow Onion, chopped
  • ½ Cup Green Bell Pepper, chopped
  • ½ Cup Red Bell Pepper, chopped
  • 15 oz Diced Tomatoes, drained
  • ½ Cup Black Olives, chopped

Toppings (optional)

Instructions
 

  • Preheat the oven to 350°F.
  • In a mixing bowl, beat the eggs, milk and salt together. Stir in bacon, cheese, onion, bell peppers, tomatoes and olives.

    I plan to make this omelet for breakfast tomorrow and I’ve read it over, looks easy but it mentions sour cream in the ingredients but not in the method? What am I not understanding?

    1. The sour cream is optional for serving. I have enhanced the recipe card to reflect this. Enjoy!

    I have loved the recipe of baked omelet and wish to try it tonight. I want to replace bacon and instead wish to bake it with ghee. Baking with ghee is safer and i love ghee flavor too. What do you friends? any suggestion?

    This baked omelet is ideal for brunch. Made it last week for company and it was a great hit. Very moist and delicious.
