This Country Casserole is a simple to make comfort casserole that my mom used to make when I was a kid. Nothing fancy or gourmet about this casserole, just a simple fill your belly kind of casserole that everyone will love.


What I like about this casserole is you could easily omit or change some of the vegetables to your liking. Don’t like Green Bell Peppers? Replace them with something else or leave them out completely!


How to Make this Recipe


Heat oil in a large skillet.


Add green pepper, corn, onion, celery and rice. Cook for 8 to 10 minutes or until onions are translucent. Stir often.


Add the ground beef, salt and pepper. Stir and cook until the beef is no longer pink.


Add tomatoes and bring to a boil. Cover and let simmer for 20 to 25 minutes until moisture is absorbed.
