This Country Casserole recipe is an easy-to-make comfort casserole recipe that my mom used to make when I was a kid. Nothing fancy or gourmet about this casserole, just a simple fill your belly kind of casserole that everyone will love.

What I like about this casserole is you can easily omit or change some of the vegetables to your liking. Don’t like Green Bell Peppers?

Replace them with something else or leave them out completely! The real trick here is getting the rice just perfect. Practice makes perfect!

My mom always made this country casserole with ground beef but on a few occasions, I’ve used some healthier Lean Ground Turkey with excellent results. Equally delicious!

I always have some long grain rice on hand so that is what I typically use when making this casserole. In reality, you can pretty much use any kind of rice you want.

I love making casseroles. They are pretty easy to make and usually take no more than 1 hour to eat. By far the most popular casserole I’ve posted on this blog is my Sloppy Joe Casserole. It’s been shared over 20k times on Pinterest and Facebook.

  • Thaw raw ground beef on a plate on the lowest shelf of the refrigerator, to avoid dripping onto other foods.
  • Keep raw and ready-to-eat meats separate.
  • Wash hands thoroughly before and after handling raw ground beef. Wash cutting boards, bowls, and utensils used to prepare raw ground beef with hot soapy water and rinse well.
  • Use separate plates to carry raw ground beef patties to the cooking area and cooked patties to the serving area.
  • Use a Thermometer to ensure Ground Beef Reaches the Safely Cooked Internal Temperature of 160°F.

Depending on how lean your ground beef is you may have to drain any excess fat after cooking the meat.

Unless you are feeding a small army you are most likely going to have some leftovers. You can reheat this casserole in a microwave-safe dish for 3-4 minutes stirring at the halfway mark. I recommend adding a tablespoon or two of water to the mixture before microwaving.

You will need the following ingredients to make Sharon’s Country Casserole recipe (see recipe card for quantities): Olive Oil, Green Bell Pepper, Corn, Yellow Onion, Celery, Long Grain Rice, Ground Beef, Tomatoes and Salt & Pepper.

  1. In a large skillet, heat olive oil. Add chopped green pepper, corn, diced onion, chopped celery and rice. Stir for 8 to 10 minutes.
  2. Add the ground beef (or turkey) and salt & pepper to taste. Stir and cook until all the meat is browned.
  3. Add the tomatoes and bring to a boil. Cover and cook for 20 to 25 minutes until moisture is absorbed.
  4. Remove from heat. Plate and Enjoy!

  • 1 Cup Frozen Corn
  • 1 Yellow Onion, diced
  • 1 Cup Celery, diced
  • 2 Cups Long Grain Rice, uncooked
  • 2 lbs Lean Ground Beef
  • 28 oz Diced Tomatoes
  • Salt and Pepper, to taste

Instructions

  1. Hi! What a great site! Lots of yummy recipes tried this one can’t wait to try more of them. I just wondered if I missed something as far a liquid amount goes. I ended up using the whole 28 oz can of tomatoes but had halved the recipe. I also added more water. I’m definitely going to make it again. I wondered about using a different method. I saw a similar type of recipe on a u tube channel under a heading called “dirty rice” where they cooked the meat and veg first then toasted the rice for three min then added the liquid and or tomatoes can’t remember if they used that or not or maybe just stock. I’ve thought about cooking it that way maybe the next time. What do you think? We really enjoyed it though when it was finally ready. Great flavors! Can’t wait to try more. Actually found your site googling soda breads I think. I recently made those from another recipe it was ok but I need to work on that also. I’m really enjoying trying new recipes!   2. This casserole is so easy and so tasty. When my kids were young I used to make it often. And now that they are older, I still make this casserole. The second day the left overs are even better. I did omit the green peppers, but I added very thinly sliced carrots. I will definitely keep on making it.
