Southern Style Macaroni Salad

My 6-year-old nephew was coming to visit and stay for dinner so I asked him what he wanted me to make for dinner.

He usually tells me he wants one of my many Mac & Cheese dishes or a Pizza made with my Pizza Dough. This time he surprised me and said he wanted some Sloppy Joe’s!

Well luckily enough, I had a great Sloppy Joe Sandwich recipe that you make in the crockpot, but I needed something to go with it.

I was dying to try this Southern Macaroni Salad so I decided to give it a try.

I wasn’t sure if my nephew would like tuna (which this recipe calls for) so I decided not to tell him what was in it.

Luckily he was watching Chicken Little on Netflix and was so into the movie I decided to let it slide and not tell him.

My wife was quick to point out that I was using 1 jar of mayonnaise and 1 jar of Miracle Whip for this recipe.

She also said that she can’t wait to see what the nutritional facts look like for this recipe and it’s probably way off the charts!

Well, I can’t argue with her on that but the flavor of this Southern Style Macaroni Salad is worth it.

You will need the following ingredients to make this Southern Style Macaroni Salad recipe (see recipe card for quantities): Pasta, Hard Boiled Eggs, Celery Stalks, Yellow Onion, White Tuna in Water, Miracle Whip, Mayonnaise, Kosher Salt, Ground Black Pepper and Paprika.

  1. Bring a large pot of salted water to a boil. Cook pasta to al dente according to directions on the package. Pour into a strainer to drain water. Rinse pasta with cold water to stop the pasta from cooking further. Return to the large pot.
  2. In a medium mixing bowl, add diced onion, chopped celery, tuna, and chopped hard-boiled eggs. Add 1/2 of the mayonnaise and 1/2 of the miracle whip to the onion mixture and mix well.
  3. Fold the mayonnaise mixture into the pasta pot and stir gently until well combined. Add remaining mayonnaise and miracle whip and mix well. Add salt and pepper to taste. Stir to combine.
  4. Sprinkle with paprika (if desired). Chill until ready to serve.

  • 2 lbs Pasta, your choice
  • 3 Hard-Boiled Eggs
  • 3 Celery Stick, diced
  • ½ medium Yellow Onion, diced
  • 6.4 oz White Tuna in Water, drained
  • 30 oz Miracle Whip
  • 30 oz Mayonnaise
  • 2 Tsp Kosher Salt
  • 2 Tsp Ground Black Pepper
  • Paprika, optional

Instructions

Notes

→ This macaroni salad is best if chilled overnight.
→ Contrary to popular belief, a whole head of celery is called a stalk and a single “stick” from the stalk is called a rib. Since most call a rib of celery “stalk”, I use the term Celery Stick to try and avoid any confusion.
