Spiced Chicken Meatloaf

I think that meatloaf is the ultimate comfort food. Most meatloaf recipes call for ground beef, but this Spiced Chicken Meatloaf recipe uses ground chicken.

The combination of the chicken and the spices makes this meatloaf recipe a family favorite – especially for those who don’t like or want to eat ground beef-based meatloaves.

I come to find out that Ground Chicken can be hard to find. If you can’t find Ground Chicken at your local grocery store, you can substitute for Ground Turkey. The flavor profile is very similar.

You will notice that this chicken meatloaf recipe calls for some stuffing mix. This is used in this recipe instead of breadcrumbs in traditional meatloaf recipes to help absorb some of the juices and keep the meat mixture moist.

You will need the following ingredients to make this Spiced Chicken Meatloaf recipe (see recipe card for quantities): Ground Chicken, Herb Stuffing Mix, Parmesan Cheese, Eggs, Yellow Onion, Salt, Ground Black Pepper, Garlic Pepper, Ketchup and BBQ Sauce.

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground chicken, stuffing mix, cheese, egg, diced onion, salt, pepper and garlic seasoning. Mix well.
  3. Add the ketchup and BBQ sauce to the meat mixture and mix until well combined.
  4. Place the meat mixture in a lightly greased loaf pan and bake for 50 minutes or until the internal temperature reaches 165°F.
  5. Remove from the oven and let rest for 10 minutes before slicing.

Ingredients
 

  • 2 lbs Ground Chicken
  • â…” Cup Herb Stuffing Mix
  • ¼ Cup Parmesan Cheese
  • 1 Egg, beaten
  • 1 Cup Yellow Onion, finely diced
  • ½ Tsp Salt
  • ½ Tsp Ground Black Pepper
  • â…› Tsp Garlic Pepper
  • 2 Tsp Ketchup
  • 2 Tsp BBQ Sauce

Instructions
 

  • Preheat the oven to 350°F.

Notes

This meatloaf tastes just as good with Ground Turkey if you can’t find Ground Chicken.

    Haven’t tried this recipe yet but just wanted to say if you can’t find ground chicken just grind chicken breasts meat it by pulsing a Ninja blender. I saw in a video that froze skinless boneless chicken meat and shredded it on a cheese grater. I might try that and see how that works.
