Sous Vide Vanilla Extract

Make homemade vanilla extract using your Sous Vide. A simple and easy method that yields delicious results.
I was running out of Vanilla Extract and needed to make another batch quickly so instead of making my Instant Pot Homemade Vanilla Extract recipe I made it in my Sous Vide.
Just like the pressure cooker, making vanilla extract in Sous Vide is super easy. A little time-consuming but very easy. Especially if you have a Sous Vide.
You may think that using expensive Vodka – which is an important ingredient for making Vanilla Extract – is the way to go but you are wrong. Use the cheap stuff and keep your money for buying a good quality vanilla bean.
Which Vanilla Beans to Use
For Vanilla Extract, I suggest a Grade B Vanilla Bean. You can find them all over the internet including Amazon but I have had good luck with the beans I’ve purchased from Slofoodgroup (no affiliation).
They have many different options that will work well with this recipe. I would suggest shopping around a bit to find the cheapest quality vanilla bean you can find. We are trying to keep the cost per ounce cheaper than the store-bought stuff!
Equipment Needed
Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this recipe.
Gather your Ingredients
You will need the following ingredients to make this Vanilla Extract recipe in Sous Vide. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Vanilla Beans – Grade B Vanilla Beans work great for this recipe
- Vodka – No need to use the expensive stuff for this recipe
How to Make Sous Vide Vanilla Extract
- Set the Sous Vide to 146ยฐF.
- Place the vanilla beans in a 32-ounce mason jar. Add the vodka to the jar and use a fork or spoon to push the vanilla beans down so that they are completely submerged in the vodka.
- Place the lid on the jar and gently lower it into the water bath. The water should reach just below the lid of the jar. If necessary set something heavy to keep it from floating.
- Cover the top of the water bath and cook for 3 hours.
- Once done, remove the jar from the water bath. Allow the vanilla extract to cool to room temperature (overnight is best). Store the extract in a cool, dark place.
