white hominy casserole

I wanted to make something a little different to go with my Holiday Ham this year so decided to make this White Hominy Casserole. I think it turned out great and all my guests really liked it as well.

If you’ve never heard of hominy, It’s basically corn (not off the cob) that has been treated with alkali. Hominy kernels are a little bigger than kernels of corn and hominy can be suitable for a gluten-free diet.

Mexican Style Hominy

For a little more flavor, I like to add a small can of green chilies. This may not be everybody’s cup of tea so feel free to substitute with different kinds of chilies.

I’ve even considered adding a can of diced tomatoes instead of the green chilies for a totally different flavor profile.

I like to add a crunchy bread crumb topping to the top of this hominy casserole but you can omit it if you want.

I also recommend checking your casserole at the 20-minute mark to make sure it is not burning. If you notice the breadcrumb top cooking too fast simply cover the top of the casserole with a loose piece of foil.

For the cheese, I like to use Monterey Jack Cheese because I find it has more flavor than Mozzarella cheese.

But feel free to use Mozzarella if that’s what you have on hand. If you don’t have either, just make sure you use a cheese that melts really well like Colby or Cheddar cheese.
