Kim Kardashian's Mac and Cheese

Ingredients
- 6 tablespoon Unsalted Butter
- 16 oz Elbow Macaroni
- 3 tablespoon All Purpose Flour
- 1 tablespoon Ground Dry Mustard
- 3 Cups Milk, Heated
- ½ Cup Yellow Onion
- ½ teaspoon Paprika
- 1 Bay Leaf
- 8 oz Velveeta Cheese
- 1 Cup Sharp Cheddar Cheese
- ¼ Cup Goat Cheese, Crumbled
- ¼ Cup Gruyere Cheese, Shredded
- ¼ Cup Mozzarella Cheese, Shredded
- ¼ Cup Parmesan Cheese, Grated
- 3 Eggs
- 1 Cup Panko Bread Crumbs
- Kosher Salt
- Ground Black Pepper
Instructions
- Bring a pot of salted water to a boil. Once the water is boiling, add the macaroni and cook until al dente. Drain the pasta well to ensure it is no longer wet.
- In a large saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour and mustard powder. Reduce the heat to low and whisk frequently for 2 minutes. Add in the hot milk and whisk until combined.
- Whisk in the onion, paprika, and bay leaf. Bring this mixture to a simmer over medium heat and simmer until the sauce is reduced. This should take about 10 minutes.
- Once it has reduced, remove the mixture from the heat. Remove the bay leaf. Mix in ¾ of each cheese into the sauce. Then stir to ensure that the cheese has melted. Season this cheese mixture with salt and pepper as desired.
- Stir in the beaten eggs slowly (to ensure they do not scramble in the hot sauce) and mix well.
- Mix in the macaroni and stir until the pasta is fully coated in with the cheese mixture.
- Melt the remaining 3 tablespoons of butter over medium heat and add the breadcrumbs. Stir to combine.
- Add the macaroni and cheese mixture into a greased baking dish, and top it with the remaining cheese and the breadcrumb mixture.
- Bake the macaroni and cheese at 350°F for 30 minutes or until the top is golden brown.
- Let cool slightly before serving.
