I was long overdue to try a new Chili Recipe as the fall season was upon us. I wanted something simple to make but packed full of flavor. I also wanted to make enough chili to feed a bunch of people I was having over to watch the game. This Beef and Pork Sausage Chili checked all those boxes.

I used a hot pork sausage roll (Jimmy Dean) but you can use mild/regular if you prefer or even use ground sausage. I know some of you believe Chili should not have beans in it, but I prefer beans so I used a combination of red kidney beans and pinto beans. You can always substitute other types of beans if you want.

I also decided to brown the meat in a skillet before adding it to a large pot to simmer with all the other ingredients. If you don’t like doing dishes, you can cook the meat in the large pot but please make sure you drain any excess grease before you add the other ingredients listed on the recipe card.

  1. In a large skillet, brown the ground beef and pork sausage. As the meat begins to brown, add the chopped onion. Drain any excess grease.
  2. Place the meat mixture in a large Dutch oven or pot. Add the remaining ingredients except the sugar and vinegar. Bring to a simmer, stirring often, for about three hours.
  3. Towards the end of the cook, with about 15-20 minutes left, add the sugar and vinegar. Add more water if needed.
  4. Optionally serve with shredded cheese, crushed tortilla chips, and sour cream with a side of lime wedges.
