I make a batch of Pulled Pork at least once a month. I usually make Smoked Pulled Pork but if the weather or my schedule isn’t cooperating, I will either make it in the oven or my Pressure Cooker. What this means is I always have a ton of pulled pork leftover.

Instead of the usual tacos or pulled pork sandwiches, this time I decided to make a Pulled Pork & Cheddar Waffle Sandwich. Basically a pulled pork sandwich but with waffles instead of bread. A fun and easy sandwich recipe the whole family will enjoy.

Recipe Tips

  • Toast the waffles a little longer than you normally would. You don’t want the waffles to get soggy when you load it up with the pulled pork

I like to use Cheddar Cheese (Mild or Sharp) but you can use any kind of sliced cheese you want. If you like your sandwiches to have a little kick to it, try a pepper jack cheese, Carolina Reaper cheese or ghost pepper cheese.

You can also use whatever kind of pickles you prefer like Bread & Butter Pickles, Dill Pickles or any other kind of sliced pickles you want! You can easily tweak this recipe to make it your own.

As far as the waffles are concerned, I usually use the frozen variety as it makes this recipe quick & easy but you can make your own waffles if you have time. As I mentioned above, make sure you cook them a little longer than you normally do so they hold together and don’t get soggy once you pile all the other ingredients on top of it.
