This Spaghetti Squash Stir Fry is a delicious and relatively healthy dish that is very easy to make. The longest part is cooking the spaghetti squash.
This dish is also very versatile as you can easily substitute any of the veggies. Don’t like mushrooms? Easy, simply leave them out!
And what is an Asian stir fry without peanuts? Not only is there a few tablespoons of peanut butter in the sauce but crushed peanuts make the best garnish.

Recipe Variation
You can use ground chicken or even ground beef instead of ground turkey. Just be mindful that the nutritional information included on the recipe card will change.
Gather your Ingredients
You will need the following ingredients to make this Asian Peanut Spaghetti Squash Stir Fry recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Spaghetti Squash – Make sure it is ripe and heavy for its size
- Olive Oil – Use the best quality you can
- Garlic Cloves – You can always add more to taste
- Lean Ground Turkey – You can also use ground chicken or ground beef
- Mushrooms – You can substitute for some Tofu or eggplant
- Green Bell Pepper – You can also use a red bell pepper or an orange bell pepper
- Red Onion – You can use a regular yellow onion as well
- Low Sodium Soy Sauce – I like Kikkoman brand (no affiliation)
- Peanut Butter – I mostly use Skippy brand but use what you prefer (no affiliation)
- Fresh Lime Juice – If you don’t have any fresh lies you can use the bottled stuff
- Ground Ginger – A little goes a long way so be careful when adding to the stir fry
- Crushed Red Pepper Flakes – Leave this ingredient out if you don’t like heat
- Peanuts – Optional especially if you or your guests have nut allergy
- Fresh Cilantro – Also optional as I know many people can’t stand the taste of cilantro
How to Make Asian Spaghetti Squash Stir Fry
- Cook the Spaghetti Squash using your preferred method.
- Meanwhile, in a large skillet over medium-high heat, heat the oil. Cook the garlic and ground turkey for about 3-5 minutes or until cooked through.
- Add the mushrooms, green bell pepper, and onions to the skillet and cook for another 4-6 minutes or until vegetables and turkey are cooked through.
- Add the soy sauce, peanut butter, lime juice, ground ginger, and crushed red pepper flakes to the skillet and stir to combine.
- Add the cooked spaghetti squash and stir to coat.
- Optionally garnish with cilantro and peanuts before serving.

Ingredients
- 1 large Spaghetti Squash
- 1 Tbsp Olive Oil
- 3 Garlic Cloves, minced
- 1 lb Lean Ground Turkey
- 8 oz Mushrooms, sliced
- 1 large Green Bell Pepper, sliced
- 1 Red Onion, thinly sliced
- โ cup Low Sodium Soy Sauce
- 3 Tbsp Peanut Butter
- 1 Tbsp Fresh Lime Juice
- ยผ Tsp Ground Ginger
- ยฝ Tsp Crushed Red Pepper Flakes, or to taste
Garnish (optional)
- ยผ cup Peanuts, finely chopped
- ยฝ cup Fresh Cilantro, chopped
Instructions
- Cook the Spaghetti Squash using your preferred method.
