This Cheesy Spaghetti Squash Casserole is not only delicious and easy to make, but it’s also a pretty healthy dish as the squash is rich in vitamins, low calories and high in fiber.

You may not have goat cheese on hand or you might not like its flavor so you have a couple of options. You can use the same amount of cream cheese or mascarpone which will retain the creamy texture.

If you have some on hand, you could also use some feta cheese though it will alter the overall flavor slightly.

A few variations for this casserole recipe would be to add some sliced mushrooms, red peppers, or even some black olives.

In a pinch, you could also add some cooked ground turkey for some extra protein. Experiment a bit and make it your own!

You will need the following ingredients to make this Cheesy Spaghetti Squash Casserole recipe (see recipe card for quantities): Spaghetti Squash, Unsalted Butter, Yellow Onion, Garlic Cloves, Plain Greek Yogurt, Goat Cheese, Sea Salt and Ground Black Pepper.

  1. Cook the spaghetti squash using your preferred method. See How to Cook Spaghetti Squash.
  2. Preheat the oven to 400°F.
  3. Once the spaghetti squash is cooked, melt the butter in a skillet over medium-high heat and saute the chopped onion and garlic until tender and slightly golden, about 5 minutes.
  4. Transfer the cooked onion and garlic to a large mixing bowl. Add the yogurt and 2 oz of the goat cheese and stir till combined. Add salt and pepper to taste.
  5. When the spaghetti squash is cool enough to handle, use a fork to scrape the noodle strands out into the bowl and mix well.
  6. Transfer the mixture to a casserole dish. Top with the remaining goat cheese.
  7. Bake for 30 minutes or until the top is light golden brown.

Ingredients
 

  • 1 medium Spaghetti Squash
  • 1 Tbsp Unsalted Butter
