My spouse got a bunch of cake mixes on special recently during a grocery run and instead of making cake, I made these fabulous Chocolate Cake Mix Cookies.
Just as you would expect, super easy to make needing only 5 simple ingredients, and bake time is a little quicker needing only 10-12 minutes in the oven!
Recipe Variation
If you are not a fan of chocolate cookies, don’t worry. You can pretty much use any flavor cake mix you want! Instead of chocolate cake, you can use a yellow cake or even a lemon cake mix.
Instead of chocolate chips, you can use peanut butter chips, raspberry chips or even some chopped up nuts. The possibilities are endless!
Gather your Ingredients
You will need the following ingredients to make this Chocolate Cake Mix Cookies recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Chocolate Cake Mix – use your favorite brand
- Light Brown Sugar – you can also use dark brown sugar or omit the sugar completely
- Unsalted Butter – required ingredient for these cookies
- Eggs – needed just like any other cake or cookie recipe
- Semi-Sweet Chocolate Chips – or any type you prefer
How to Make Chocolate Cake Mix Cookies
- Preheat the oven to 350ºF.
- In a medium bowl, mix the chocolate cake mix, butter and eggs until smooth and well blended. Fold in the chocolate chips.
- Using a cookie scoop or a spoon, drop a spoonful on a parchment lined baking sheet.
- Bake for 10 to 12 minutes or until the cookies are set and begin to “crack” on top.
- Let the cookies cool on the baking sheet for about 5 minutes before moving them to a wire rack to cool completely.
