Everyone loves a good meatloaf. One of the ultimate comfort foods. I’ve posted meatloaf recipes before and I will probably never stop as long as I can come up with some good recipes. And this Coca-Cola Meatloaf fits the bill.

Most meatloaf recipes are very similar (meat, spices, breadcrumbs, etc.), but this one caught my attention because one of the ingredients is Coca-Cola (aka. Coke).

I’ve made this meatloaf with both regular Coke and Diet Coke and to be honest, I could not tell a difference but do prefer to use regular coke for this recipe.

While Coca-Cola is an unusual ingredient for meatloaf, the process of making this delicious meatloaf is similar to every other basic meatloaf recipe out there.

It takes less than 10 minutes to slap together and about 1 hour to cook. Let it rest for a solid 10 minutes and voila! A delicious meatloaf dinner.

When it comes to baking your meatloaf, you have a couple of options. You can bake it the traditional way in a loaf pan or bake it on a foil lined baking sheet.

Depending on how lean your ground beef is, you may find the meatloaf sitting in grease. One way to avoid this is to shape the meat mixture into the shape of a loaf and bake it on a baking sheet. This will allow the grease to run off into the pan.

Our friends over at the USDA recommend an internal temperature of 160°F when cooking meatloaf. This should be enough to kill the salmonella.

You can take the meatloaf out of the oven at around 150°F and let it rest for 10 minutes. Check the internal temperature again before slicing & serving.

You will need the following ingredients to make this Coca-Cola Meatloaf recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Ground Beef – I like to use 80/20 for meatloaf
  • Bread Crumbs – You can use regular bread crumbs, seasoned bread crumbs or even some Panko bread crumbs
  • Yellow Onion – you can also use sweet brown or white onions
  • Fresh Ginger – provides a mild, fresh, and slightly peppery flavor, along with a pop of color
  • Egg – used as a binder
  • Coca-Cola – I like regular Coke but you can also use diet
  • Ketchup – I use Heinz brand but use whatever you want (no affiliation)
  • Yellow Mustard – I use French’s mustard (no affiliation)
  • Salt – helps bring out the flavor of the other ingredients
  • Dried Basil – adds a sweet, slightly peppery, and aromatic flavor
  • Ground Black Pepper – used in many recipes
  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the ground beef, bread crumbs, onion and parsley.
  3. In another bowl, combine the beaten egg, and the remaining ingredients.
  4. Add the wet mixture to the meat mixture. Combine to blend thoroughly. The meat mixture should be soft at this point. Place the meat mixture in a standard loaf pan.

  5. Bake for 1 hour. Let it sit for about 10 minutes before slicing.

  • 1 ½ lbs Ground Beef
