    I love a good salsa and this Copycat Sweet Corn Salsa recipe from Chipotle does not disappoint! Ready in 5 minutes!

    Just like most salsa recipes, this sweet corn salsa is super easy to make. All you need to do is toss a handful of ingredients together and season with a little lime juice and salt.

    If you are not familiar with Chipotle, it's a chain of fast-casual restaurants specializing in tacos and Mission-style burritos.

    Since I always seem to be in a hurry I used canned sweet corn for this salsa recipe. If you have the time, this salsa from Chipotle tastes so much better if you use fresh corn on the cob.

    🌶 How to Handle Hot Peppers

    The capsaicin in hot peppers is what makes peppers hot. If you handle hot peppers gloveless, it’s a guarantee that you’re in for a nasty case of chili burn, both on your fingers and anywhere you rub. Like your face. Ouch!

    Even if you wear disposable gloves, be careful about what you touch. The gloves are going to protect your fingers, but touching any part of your body with the gloves after you’ve handled hot peppers can lead to severe chili burn. Resist the temptation to rub your eyes. Wait until you’ve removed your gloves and washed your hands thoroughly with soap.

    In a mixing bowl, add the corn, finely chopped jalapeños, red onion, and chopped cilantro. Stir till combined
    Add the lime juice, stir, then salt to taste.
    If possible, cover and let rest in the refrigerator for an hour so all the flavors can meld together.

    • 1 ½ Cups Sweet Corn, drained
    • 2 teaspoon Fresh Jalapeños, finely chopped
    • ¼ Cup Red Onion, finely chopped
    • ¼ Cup Fresh Cilantro, chopped
    • 2 tablespoon Fresh Lime Juice
    • ½ teaspoon Sea Salt, or to taste
