In my quest to find unique side dishes for our holiday dinners, I stumbled upon this corn casserole recipe in an old recipe book. I made a few changes and adaptations, and the result is a delicious side dish that can be enjoyed with practically any meal.

When I am hosting a party or making something for a potluck, I want it to be easy to prepare and, if needed, portable so I can easily bring it with me. One time, I actually prepared the dish and baked it when I arrived at my destination. It was only a few miles away so I wasn’t too concerned but beyond that, I would not wait to make it because the casserole has eggs in it.

Another thing I love about this casserole recipe is how versatile it is. You can use whatever color bell pepper you want as an example or even add a little chopped bacon. If you like a little heat, you can add a little cayenne to the veggie mixture before baking.

Recipe FAQ’s

Do I have to use Eggs?

The eggs act as a binder. Without the eggs it will be “soupy”. If you prefer you can substitute for 1/2 cup of sour cream or plain Greek yogurt.

Do I have to use Ritz brand crackers?

No you can use whatever brand of buttered crackers you want. You can also use plain saltines but it won’t have the same flavor.

What is Cheese Blend?

A cheese blend is a mix of different kinds of cheese. I used an Italian Cheese blend for this recipe which has 6 different kinds of cheese. You can also use a Mexican Blend Cheese if you prefer.

Cream Corn, Sweet Corn, Bell Pepper, Yellow Onion, Green Chilies, Unsalted Butter, Eggs, White Sugar, Cheese Blend, Ritz Crackers and Parmesan Cheese.

How to Make Fiesta Corn Casserole

  1. Preheat the oven to 350ยฐF.
  2. In a large bowl, combine both cans of corn, bell pepper, onions, green chilies, melted butter, beaten eggs, sugar, 1/2 cup crushed Ritz crackers, cheese, salt and pepper.

  3. Pour the mixture into a lightly greased 9 x 13 baking dish.

  4. In a small bowl, combine the remaining 1 cup of crushed Ritz crackers and the Parmesan cheese. Sprinkle over the veggie mixture. fiesta corn casserole
  5. Bake uncovered for 45 minutes.
