
Not too long ago, while tidying up my office and going through old cookbooks, I stumbled upon a recipe for a Chuck Wagon Casserole. Intrigued, I decided to keep it with the intention of making it at some point.
What finally made me try this casserole recipe was that I was looking for something inexpensive to make that would easily feed 6 people, including children. I went through my arsenal of draft recipes and decided to give it a shot.

I am always a little cautious when young ones are going to be eating my food. Since most of them don’t have sophisticated palates, I try to make the recipes as simple as possible. For this recipe, the meat mixture reminds me of a sweet sloppy joe mixture topped with sweet corn muffin mix.

You can use whatever brand you prefer. I like to use sweet BBQ Sauce for this recipe.
You sure can. Using a smaller baking dish will yield a thicker meat and corn muffin mixture. Cook time should be roughly the same.
Yes! You can make the meat mixture ahead of time and refrigerate it overnight. When ready to serve, make the cornbread topping and bake.

Recipe Variation
Not only is this chuck wagon casserole delicious, but it is also very versatile so you can customize it to your liking. For example, you can use ground turkey instead of beef, use spicy peppers instead of bell peppers and pretty much use any flavor of BBQ sauce you want. The possibilities are endless.

Lean Ground Beef, Yellow Onions, Green Bell Pepper, Chili Beans, BBQ Sauce, Salt, Corn Muffin Mix, Sweet Corn and Diced Peppers.
How to Make Chuck Wagon Casserole
- Preheat the oven to 400ยฐF.
- In a large skillet or dutch oven over medium heat, cook the ground beef, onions and pepper. Stir until it is no longer pink. If necessary drain any excess grease.
- Stir in the chili beans, BBQ sauce and salt. Bring to a boil. Spoon into a lightly greased 9 x 13 baking dish and set aside.
- Prepare the corn muffin mix according to the directions on the package. Typically calls for 1 egg and some milk.
- Fold in the corn and spoon the corn muffin mix over the prepared meat mixture.
- Bake for 30 minutes, or until the top is golden brown.
