And what I really love about this recipe is you only need 1 pot from start to finish! Which is awesome if you hate doing dishes like I do.

The amount of Corned Beef I have listed on the recipe card is a suggestion. Locally I can only find them in 3-4 pounds weights. I've made this recipe with a 3 ½ pound corned beef brisket (flat cut) without any issues.
You can add a few more veggies if you want. As long as everything fits in your slow cooker you are good to go! Just make sure the corned beef brisket has reached an internal temperature of 145°F.
💭 Slow Cooker Tip
Try to resist as much as possible the temptation to open the lid while it's cooking as the slow cooker loses heat. By just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.
🥩 What is Corned Beef
Corned Beef is basically a beef brisket. The brine is a mixture of spices and salt. There are several different cuts of Corned Beef Briskets but I usually use a flat cut when making this recipe. You can always use a point cut corned beef for this recipe if that is what you prefer.

📋 Gather your Ingredients
You will need the following ingredients to make this Diabetic Corned Beef recipe in your Slow Cooker (see recipe card for quantities): Carrots, Celery, Ground Black Pepper, Water, Corned Beef, Yellow Onion, Head of Cabbage and Russet Potatoes.
🥣 How to make Diabetic Corned Beef
Place the carrots, celery, ground black pepper and water in the bottom of your slow cooker.
Place the corned beef on top of the veggies. Cover the meat with the onions.
Cover your slow cooker and cook on low 8-10 hours or on high 5-6 hours.
Temporarily remove the corned beef from the slow cooker. Add the cabbage and potatoes pushing them to the bottom of the slow cooker.
Return the corned beef to the slow cooker. Cover and cook on high for 2 hours.
Remove the corned beef. Let rest for 15 minutes then slice on the diagonal. Serve with the vegetables.

Ingredients
- 3 large Carrots, cut into chunks
- 1 cup Celery, chopped
- ½ teaspoon Ground Black Pepper
- 1 cup Water
- 2 lb Corned Beef, trimmed of fat
- 1 large Yellow Onion, cut into pieces
- ½ half Head of Cabbage, cut into wedges
- 4 medium Russet Potatoes, peeled and chunked
Instructions
- Place the carrots, celery, ground black pepper and the water in the bottom of your slow cooker.
- Place the corned beef on top of the veggies. Cover the meat with the onions.
- Cover your slow cooker and cook on low 8-10 hours or on high 5-6 hours.
- Temporarily remove the corned beef from the slow cooker. Add the cabbage and potatoes pushing them to the bottom of the slow cooker.
- Return the corned beef to the slow cooker. Cover and cook on high for 2 hours.

This Slow Cooker Diabetic Corned Beef is the best I have ever made. I love my slow cooker and try to make as many meals as I can in it. This recipe turned out perfectly. A keeper for sure.
