Corned Beef Sandwich with Cabbage Slaw

This delicious corned beef sandwich with cabbage slaw is a perfect use of leftover corned beef. Awesome on Rye Bread!
Not sure what to do with all that leftover Corned Beef? How about this Corned Beef Sandwich recipe topped with Cabbage Slaw. This is the only way to make a corned beef sandwich in my opinion.
I love to make my corned beef sandwiches on toasted Rye bread. The combination of flavors is spot on. That being said, feel free to use whatever kind of bread you prefer or have on hand.
If you’ve never had a corned beef sandwich on Rye bread you have no idea what you are missing.
Mustard is a must when eating corned beef. You can use whatever kind of mustard you prefer but I’m including something a little different on the recipe card.
Totally optional but I like to cut my Dijon mustard with a little brown sugar.
I’m also including a simple slaw recipe to top your sandwich with. I figured since you probably have leftover cabbage from when you made the corned beef, why not use it up and make a nice coleslaw?
Again, if this is not your thing just don’t make it. You can easily make the cabbage slaw wetter by adjusting the amount of Greek yogurt you use.
What is Corned Beef
Corned Beef is basically a beef brisket. The brine is a mixture of spices and salt. There are several different cuts of Corned Beef Briskets but I usually use a flat cut when making this recipe. You can always use a point-cut corned beef for this recipe if that is what you prefer.
Corned Beef vs Reuben Sandwich
So what’s the difference between this corned beef sandwich and a Reuben sandwich?
They both call for Rye bread and thinly sliced corned beef but a Reuben sandwich uses Russian dressing instead of mustard, has Swiss cheese on it and uses sauerkraut instead of cabbage slaw.

Gather your Ingredients
You will need the following ingredients to make this Corned Beef Cabbage Slaw Sandwich recipe (see recipe card for quantities): Corned Beef, Rye Bread, Dijon Mustard, Light Brown Sugar, Coleslaw, Green Cabbage, Fresh Lemon Juice, Plain Greek Yogurt, Honey, Salt, Ground Dry Mustard and Ground Allspice.
How to Make Corned Beef Sandwich
- In a small bowl, combine all the sauce ingredients and whisk until smooth. Set aside.
- In a mixing bowl, combine all the coleslaw ingredients and stir until well combined.
- Spread the sauce on both slices of rye bread. Add the sliced corned beef and top with slaw.

- 6 oz Corned Beef, cooked and sliced
- 4 Slices Rye Bread
Sauce
- ½ Cup Dijon Mustard
- 2 Tbsp Light Brown Sugar
Coleslaw
- 2 Cups Green Cabbage, shredded
- 2 Tbsp Fresh Lemon Juice
- ½ Cup Plain Greek Yogurt, or more to taste
- 1 Tbsp Honey
- ½ Tsp Salt
- ½ Tsp Ground Dry Mustard
- ½ Tsp Ground Allspice
Instructions
Make the Sauce
- In a small bowl, combine all the sauce ingredients and whisk until smooth. Set aside.
Make the Coleslaw
- In a mixing bowl, combine all the coleslaw ingredients and stir until well combined.
Assemble the Sandwich
- Spread the sauce on both slices of rye bread. Add the sliced corned beef and top with slaw.
