What do you do with leftover corned beef? You make Reuben Sandwiches of course!

There are several different ways to make a Reuben but this is my favorite way.

Corned Beef is basically a beef brisket. The brine is a mixture of spices and salt. There are several different cuts of Corned Beef Briskets but I usually use a flat cut when making this recipe. You can always use a point-cut corned beef for this recipe if that is what you prefer.

I’m fortunate enough to have a meat slicer so getting my corned beef razor thin is easy. If you don’t own a meat slicer, make sure you use the sharpest knife you have.

Oh, it helps if the meat is very cold. Much easier to slice when it is cold versus warm/hot.
