What do you do with leftover corned beef? You make Reuben Sandwiches of course! There are several different ways to make a Reuben but this is my favorite way.

Corned Beef is basically a beef brisket. The brine is a mixture of spices and salt. There are several different cuts of Corned Beef Briskets but I usually use a flat cut when making this recipe. You can always use a point-cut corned beef for this recipe if that is what you prefer.

I’m fortunate enough to have a meat slicer so getting my corned beef razor thin is easy. If you don’t own a meat slicer, make sure you use the sharpest knife you have.

Oh, it helps if the meat is very cold. Much easier to slice when it is cold versus warm/hot.

Serve your Reuben with a pickle, potato chips, French fries, or one of these classic deli sides:

You will need the following ingredients to make this Reuben Sandwiches recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Rye Bread – Russian, Jewish or Dark Rye all work well
  • Russian Dressing – Thousand Islands dressing is a popular substitute
  • Corned Beef – as thinly sliced as you can
  • Sauerkraut – a key ingredient for Reuben sandwiches
  • Swiss Cheese – it’s not a Reuben without Swiss Cheese
  1. Preheat the oven to 400°F.
  2. Spread the Russian dressing evenly on 1 side of each slice of rye bread.

  3. Layer with the corned beef, sauerkraut, and cheese.

  4. Place the sandwiches on a baking sheet. Bake until the cheese melts.
