I love my Shredded Mississippi Chicken recipe, but I was looking for something a little different as I was getting “burnt out” on Chicken Recipes. I had half a pork loin (4 lbs) in my meat freezer so I figured I would give it a shot with a few tweaks from my original recipe.
Pork Loin vs Tenderloin
A pork loin and a pork tenderloin are not the same. A pork tenderloin is a long, narrow and boneless cut of meat with very little fat, while a pork loin is wider and flatter, usually has a fat cap and comes either boneless or bone-in.
I thought this pork was delicious. My wife however was quick to point out that it was spicier than the chicken version I’ve made a dozen times before. Come to find out I picked a jar ofmedium-hot peperroncini peppers instead of mild. Just pointing that out in case you decide to make this delicious Slow Cooker recipe.
Slow Cooker Tip
Try to resist as much as possible the temptation to open the lid while it’s cooking as the slow cooker loses heat. Just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.
Cook times may vary based on the slow cooker‘s brand, size, model, etc.
Recipe Tips
- Depending on the brand and/or where you live, there are 2 different spelling for the peppers used in this recipe: Peperoncini and Pepperoncini.
- OVEN METHOD: Place the pork loin in a covered roasting dish. Sprinkle the ranch seasoning over the pork loin. Place the sliced butter over the seasoned pork loin. Add the peppers and juice to the pan. DO NOT POUR OVER THE PORK LOIN. Cover the roasting dish. Cook for approximately 25 minutes per pound at 325°F. Uncover for the last 15 minutes. Let rest uncovered for 10 minutes before slicing.
- You can sear the pork loin in a skillet before placing it in the slow cooker for a little more color if you want.

How to Make Mississippi Pork Loin Roast
- Lightly spray the slow cooker.
- Place the pork loin in the slow cooker.
- Sprinkle the ranch seasoning evenly over the top of the pork loin.
- Add the butter slices on top of the seasoned pork loin.
- Scatter the peperoncini around the pork. Pour the peperoncini juice around the loin, not directly on top.
- Cook on low for 4–5 hours. Remove the loin from the slow cooker when it reaches an internal temperature of 145°F. Let the pork loin rest 10 minutes before slicing.
