I wanted something a little different for Taco Tuesday. I was tired of mostly making chicken tacos. I had some skirt steak in the freezer and used it to make these delicious Carne Asada Tacos.

If you are not familiar with the term “Carne Asada”, it basically means Grilled Meat in English. Which is exactly what these tacos are. Packed full of grilled meat!

You may be tempted to skip marinating the skirt steak but I highly recommend it. Marinating it can significantly enhance its flavor and tenderness.

I mean who wants to chew on a piece of tough meat when taking a bite out of their tacos? Nobody!

Tips

  • Skirt Steak cooks pretty quickly so make sure you don’t overcook it! For this recipe, you are ideally looking for an internal temperature of 130°F-135°F.

For planning purposes, you should plan for two tacos per person. Each taco will have approximately 2 ounces of meat plus toppings. For reference, one pound of ground beef will yield about 14 ounces once cooked.

You will need the following ingredients to make this Carne Asada Tacos recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Skirt Steak – You can also use Flank Steak
  • Fresh Lime Juice – If you don’t have any fresh limes you can use bottled lime juice
  • Carne Asada Seasoning – If you don’t have any on hand you can also use equal amounts of Salt, Pepper and Garlic Powder

  • Corn Tortillas – You can also use flour tortillas if you prefer
  1. Trim any excess fat off the skirt steak. Add the steak to a large freezer bag.
  2. Add the lime juice and 1 tablespoon of the seasoning to the bag. Seal the bag removing any excess air. Squeeze the meat through the bag to coat all the meat. Let marinate in the refrigerator for at least one hour, preferably longer.

  3. Remove the steak from the bag and discard the remaining marinade. Season both sides of the steak with the remaining 1 tablespoon of seasoning.
  4. Place the steak on the grill, and cook for 4-8 minutes, flip the steaks and grill for an additional 4-8 minutes.

  5. Remove the steak from the grill, loosely cover it with foil, and let it sit for 5-10 minutes.
  6. Cut the steak into pieces and serve with tortillas and your favorite taco toppings.

Ingredients
 

  • 1 ½ lbs Skirt Steak

  • 8 Corn Tortillas, or flour tortillas
Toppings (Optional)
  • Yellow Onion
  • Fresh Cilantro
  • Sour Cream
  • Salsa
  • Lime Wedges
