Easy Steak Tacos

These Steak Tacos have become my new favorite. Super easy to make with flat iron steak and a delicious Pomegranate marinade.

I love this Steak Taco recipe. Super easy to make but you have to give the steak time to marinate in the pomegranate marinade.

You can use 3 different kinds of meat for this taco recipe. A flat iron steak, skirt steak, or flank steak. They are very similar in nature and cook to the same internal temperature.

When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F.

You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

It is critical to let the meat marinate for as long as possible. This will help tenderize the meat. You don’t want to have tough chewy steak in your tacos!

For planning purposes, you should plan for two tacos per person. Each taco will have approximately 2 ounces of meat plus toppings. For reference, one pound of ground beef will yield about 14 ounces once cooked.

You will need the following ingredients to make this Steak Tacos recipe (see recipe card for quantities): Flat Iron Steak, Corn or Flour Tortillas, Pomegranate Juice, Fresh Lime Juice, Olive Oil, Garlic Cloves, Fresh Jalapeño, Fresh Cilantro and Kosher Salt.

Optional toppings for your tacos includes: Avocado Cotija Cheese Fresh Cilantro, Salsa Verde, Sour Cream and Red Onions.

  1. Add the flat iron steak to a 1 gallon freezer bag.
  2. In a bowl, combine the pomegranate juice, lime juice, olive oil, garlic, jalapeño, cilantro and salt. Pour the marinade into the bag with the steak. Marinate for a minimum of 6 hours or overnight.
  3. Heat the grill or a skillet over high heat. Remove the steak from the marinade. Grill for 5 to 7 minutes per side for medium rare, 130°F internal temperature or 145°F internal temperature for medium.
  4. Remove the meat to a cutting board and let rest for 10 minutes before slicing.
  5. Heat the tortillas using your preferred method.
  6. Thinly slice the steak against the grain. Divide the slices among the tortillas. Top with your favorite toppings.

Ingredients
 

Tacos

  • 1 lb Flat Iron Steak, or skirt steak or flank steak
  • 16 Corn Tortillas, or flour

Marinade

  • cups Pomegranate Juice
  • 1 ½ Tbsp Fresh Lime Juice
  • 2 Tbsp Olive Oil
  • 3 Garlic Cloves, pressed
  • 1 Fresh Jalapeño, diced
  • ¼ Cup Fresh Cilantro
  • 1 Tsp Kosher Salt

Toppings (optional)

  • Avocado
  • Cotija Cheese
  • Fresh Cilantro, chopped
  • Salsa Verde
  • Sour Cream
  • Red Onion, sliced

Instructions
