Winter is upon us so it was time to pivot and make some stick to your ribs kind of recipes. And this Chicken Hominy Stew is exactly that! Comfort food at its best!

Unlike other stew recipes, this one is super simple to make. You basically add all the ingredients to a large pot or Dutch Oven and let it simmer for a good 30 minutes.

This recipe calls for pre-made chicken. You can either cook the chicken using your favorite method (grill, bake, air fryer, instant pot, etc.) of save time and use some rotisseried chicken. If you do decide to use rotisserie chicken I do recommend taking the skin off.

Tips

  • If you don’t have any ranch dressing mix on hand you can use ranch dressing (wet) as a substitute.
  • Use rotisserie chicken to speed things up. Just make sure you remove the skin before adding it to the stew.

What is Hominy

If you’ve never heard of hominy, It’s basically corn (not off the cob) that has been treated with alkali. Hominy kernels are a little bigger than kernels of corn and hominy can be suitable for a gluten-free diet.

It’s really easy to find Hominy here on the West Coast but it might be a little more challenging in some parts of the country. Just check the Ethnic / Hispanic section of your local grocery store which is where I always find it.

You will need the following ingredients to make this Chicken Hominy Stew recipe (see recipe card for quantities):

  • Chicken Breasts – you can also use rotisserie chicken to save some time
  • White Hominy – I like Juanitas brand (no affiliation)
  • Chili Beans – Bush’s is my favorite but use what you got
  • Mexican Style Stewed Tomatoes – you can use regular stewed tomatoes if needed
  • Sweet Corn and Diced Peppers – don’t forget to drain the juice if needed
  • Ranch Dressing Mix – I like Hidden Valley brand. You can also make your own
  • Yellow Onion – you can also use a sweet brown onion if you want
  • Salt and Pepper – to taste. You may need to adjust if using regular stewed tomatoes

How to Make Chicken Hominy Stew

  1. Add all the ingredients (except the garnishes) to a large pot or Dutch oven. Stir until all the ingredients are well combined.

  2. Let the stew simmer over medium heat for about 30 minutes stirring occasionally.
  3. Optionally garnish with crushed tortilla chips, shredded cheese, sour cream and guacamole.
