This Copycat Chipotle Cilantro Lime Rice is about as easy as it gets to make. This cilantro lime rice is especially popular at the Chipotle’s restaurant chain.
The first time I had Chipotle’s Cilantro Lime Rice was with their Barbacoa Beef. Talk about delicious! I actually liked it so much that I made a copycat version of their Barbacoa which you can find here.
Ok, enough talking about their Barbacoa, back to talking about this cilantro lime rice. I was making some Apricot Glazed Chicken wings for dinner and was looking for a something quick to make and since my garden is overflowing with cilantro, I figured why not?
