    Fantastic Ham Fried Rice

    This Fantastic Ham Fried Rice recipe is super easy to make and takes care of all that leftover Holiday ham. This one is a keeper for sure!

    Do you have a bunch of leftover ham and not sure what to make with it? Well you can make my Delicious Ham Salad Sandwiches or you can make this Fantastic Ham Fried Rice.

    If you or your guests don't like pineapple, feel free to leave that ingredient out. For the frozen mixed vegetables, we like to use frozen peas and carrots but you can use whatever you have on hand. I just find that peas and carrots are a little more authentic.

    Just like most fried rice recipes, you can either use it as a side dish or you can turn it into a main course by adding more ham to the rice mixture. I can't tell you how many times I scoop up a full bowl of fried rice for my main course.

    You also have the option of making the scrambled eggs ahead of time if you are not a fan of adding the raw eggs to the same skillet as the rice and vegetables. The end result will be the same.

    The bottom line is if you have a bunch of leftover ham from the Holidays, or any other occasion, you need to make this fantastic ham fried rice recipe.

    📋 Gather your Ingredients

    You will need the following ingredients to make this Fantastic Ham Fried Rice recipe (see recipe card for quantities): Cooked Ham, Yellow Onion, Olive Oil, Sliced Mushrooms, Short Grain Rice, Frozen Mixed Vegetables, Low Sodium Soy Sauce and Eggs.

    🥣 How to make Ham Fried Rice

    In a large skillet over medium heat, sauté the ham and onion in the olive oil until lightly browned.
    Add the diced pineapple, cooked rice and vegetables and cook until vegetables are tender. Stir in the Low Sodium Soy Sauce.
    Slide the rice mixture to the side of the skillet, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the rice mixture.

    Ingredients
     

    • 1 Cup Cooked Ham, diced
    • 1 small Yellow Onion, chopped
    • 2 tablespoon Olive Oil
    • 1 Cup Pineapple, diced
    • 4 Cups Short Grain Rice, cooked
    • 1 Cup Frozen Peas and Carrots
    • ⅓ Cup Low Sodium Soy Sauce
    • 2 Eggs, beaten

      This Fantastic Ham Fried Rice is one of the best recipes I have ever made. So tasty. The pineapple was not too sweet but added a great flavour. Thank you Chef for posting this great recipe.
