Try this amazing recipe for Cream Cheese Chicken Taquitos. Made with rotisserie chicken and cream cheese, perfect for an appetizer or snack!
I love me some Taquitos. I was trying to figure out what to make with some leftover rotisserie chicken and decided to make these cream cheese and chicken taquitos as I always have corn tortillas on hand.
I also have a Deep Fryer which made making these taquitos a breeze. If you don’t own a deep fryer, don’t worry, you can easily make them in a skillet with oil. Or you can also try my Baked Pulled Pork Taquitos.
Tips
- If you don’t have any rotisserie chicken, you can cook and shred a couple of chicken breasts using your preferred method
I like to add some Onion Powder to the chicken mixture but you can also use some Garlic Powder, Chili Powder or even some Ground Cumin if you want.
Deep Frying Oils
When it comes to Deep Frying food you want to choose an oil that has a high smoke point and neutral in flavor so it won’t affect the flavor of whatever you are frying. Vegetable Oil, Corn Oil, Canola Oil and Peanut Oil are some of the more popular and affordable options.
Taquitos vs Flautas
The main differences between flautas and taquitos are that flautas are made with burrito-sized flour tortillas while taquitos are usually made with smaller corn tortillas.
How to Soften Tortillas
When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350ยฐF. You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.
Equipment Needed
Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this recipe.

- Corn Tortillas – 6-inch tortillas work great for this recipe
