I had some leftover ham from a previous cook so decided to make this delicious Corn Chowder with Ham. There are so many different ways to make corn chowder but this is one of our favs.

Most corn chowder recipes call for some potatoes. I wasn’t in the mood for that so decided to mix things up a bit. Like I said I had some leftover ham so that is what I used but you could easily substitute for another protein like some diced chicken or turkey.

If you want a little more kick to your soup than what the green chilies offer, how about using a tablespoon or two of diced Jalapeños.
Additionally, I like to use half & half when making this soup recipe as I like it a little thicker but you can use milk instead if that is what you have on hand.

If you are not familiar, the main difference between milk and Half & Half is well Half & Half is half milk and half cream resulting in a thicker consistency which is what I like for my chowders.

For this chowder recipe, I also like to use one can of sweet corn and one can of cream corn for the consistency but you can skip the cream corn and simply use two cans of sweet corn. Or regular corn if that is what you have handy.
