Diabetic Slow Cooker White Chili

This Diabetic friendly white chicken chili is super easy to make in the slow cooker. Only a few simple ingredients are needed.
I love making chili. I especially love making it in my slow cooker and this white chicken chili is Diabetic friendly as well!
Unlike some of my other Gourmet Chili Recipes, this one is pretty simple to make. A handful of ingredients and let the slow cooker do its thing for a few hours.

Ingredient Substitution
If you don’t have any Great Northern Beans on hand you can substitute for an equal amount of Navy Beans or Cannellini Beans. Or a combination of all three if you want!
For the chicken used in this chili recipe, you have a couple of options. You can cook the chicken breasts using your preferred method OR you can use a rotisserie chicken.
Slow Cooker Tip
Try to resist as much as possible the temptation to open the lid while it’s cooking as the slow cooker loses heat. Just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.
Cook times may vary based on the slow cooker’s brand, size, model, etc.
This Chicken Chili is a little “soupier” than many of my other chili recipes so if you prefer your chili a little thicker you can use a little less chicken broth.
Gather your Ingredients
You will need the following ingredients to make this Diabetic White Chili recipe in your slow cooker (see recipe card for quantities): Great Northern Beans, Chicken Breasts, Yellow Onion, Red Bell Pepper, Garlic Cloves, Ground Cumin, Salt, Dried Oregano and Low Sodium Chicken Broth.
How to Make Diabetic White Chili
- Add all of the ingredients to the slow cooker.
- Cover and cook on low 8-10 hours, or high 4-5 hours.
- Once the chili is done, ladle it into bowls and optionally garnish with your preferred toppings.

- 1 Cup Yellow Onion, chopped
- 1 ½ Cups Red Bell Pepper, chopped
- 2 Garlic Cloves, minced

- Fat Free Sour Cream
- Reduced Fat Cheddar Cheese, shredded
- Baked Tortilla Chips
Instructions
- Add all of the ingredients to the slow cooker.
- Cover and cook on low 8-10 hours, or high 4-5 hours.
