I love making chili. I especially love making it in my slow cooker and this chicken chili is Diabetic friendly as well!

    chili ingredients in slow cooker

Unlike some of my other Gourmet Chili Recipes, this one is pretty simple to make. A handful of ingredients and let the slow cooker do its thing for a few hours.

    💭 Disclaimer for Diabetic Recipes

Managing your Diabetes from day to day varies from person to person based on several factors: type of diabetes, age, weight, etc. As a general rule, your best choice will be foods lower in carbs, saturated fat, trans fat, added sugar and sodium. We recommend consulting with a Registered Dietitian about your specific situation.

    💭 Ingredient Substitution

If you don't have any Great Northern Beans on hand you can substitute for an equal amount of Navy Beans or Cannellini Beans. Or a combination of all three if you want!

For the chicken used in this chili recipe, you have a couple of options. You can cook the chicken breasts using your preferred method OR you can use a rotisserie chicken.

    💭 Slow Cooker Tip

Try to resist as much as possible the temptation to open the lid while it's cooking as the slow cooker loses heat. Just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.

Cook times may vary based on the slow cooker's brand, size, model, etc.

    Diabetic Slow Cooker White Chili

This Chicken Chili is a little "soupier" than many of my other chili recipes so if you prefer your chili a little thicker you can use a little less chicken broth.
