I enjoy making casseroles with tater tots and this Mexican-inspired recipe does not disappoint! What I really like about casserole recipes like this one is how customizable they are. You can pretty much add or substitute any ingredient you want.

This casserole is packed full of flavors thanks to the spices, beans, chilies, and that crispy layer of golden tater tots and melted cheese.

Some of the substitutions you can make to this delicious casserole recipe include using lean ground turkey instead of ground beef.

If you don’t want to use Green Chilies you can substitute for a Green Bell Pepper. I’ve also made this tater tot casserole by adding some diced tomatoes.

You will need the following ingredients to make this Mexican Tater Tot Casserole recipe (see recipe card for quantities): Lean Ground Beef, Yellow Onion, Taco Seasoning, Green Chilies, Black Beans, Frozen Corn, Red Enchilada Sauce, Mexican Blend Cheese, Frozen Tater Tots and optionally some Fresh Cilantro and Sour Cream for garnish.

  1. Preheat the oven to 375ยฐF. Lightly spray a 9 x 13 baking dish. Set aside.
  2. Add the ground beef and the onion to a skillet and cook until browned. Drain any excess fat.
  3. Add the taco seasoning, green chilies, black beans, frozen corn and the enchilada sauce to the meat mixture. Stir until all the ingredients are well combined.

  4. Cook for another 8 to 10 minutes.
  5. Add 2 cups of the shredded cheese to the meat mixture and stir until blended.
  6. Pour the mixture into the prepared baking dish and spread evenly. Place the tater tots evenly over the top of the meat mixture.

  7. Bake for 35 to 40 minutes.
  8. Remove from the oven and add the remaining cup of cheese over the top. Bake another 5 minutes or until the cheese is melted.
  9. Optionally garnish with fresh cilantro and sour cream.
