If you are looking for a great side dish for the Holidays then you must try this Super Easy Corn Casserole recipe. Easily prepared in 10 minutes with about 45 minutes in the oven.
It really doesn’t get much easier than this when it comes to making a side dish. In a nutshell, you mix all the ingredients in a bowl and then bake in a casserole dish for 40-45 minutes. That’s it.
Another thing I love about this corn casserole recipe is just how versatile it is. You can use whatever color bell pepper you want.
I had an orange bell pepper on hand so that’s what I used. I also had a yellow onion on hand so that’s what I used but you could easily use a sweet brown onion or even a Vidalia onion for even more flavor.
I used some Sharp Cheddar cheese for this corn casserole because that’s what I had on hand but you can use whatever you have in the fridge. Next time I make this casserole dish I will try some Monterey Jack Cheese.

You will need the following ingredients to make this Super Easy Corn Casserole recipe (see recipe card for quantities): Cream Corn, Sweet Corn, Chicken Flavored Stuffing Mix, Sharp Cheddar Cheese, Eggs, Yellow Onion, Green Pepper, Pimientos, Unsalted Butter and White Sugar.
How to Make Corn Casserole
- Preheat the oven to 350°F.
- In a large bowl, combine all the ingredients and toss until well combined.
- Spoon the corn mixture into a greased 9 x 13 baking dish. Bake for 45-55 minutes.
- Let stand 5 minutes before serving.

- 15 oz Cream Corn
- 15 oz Sweet Corn, drained
- 6 oz Chicken Flavored Stuffing Mix

This corn casserole was very tasty. I used a green pepper instead of a red one, and it was a great hit. Very tasty. Brought it to an open house and everyone loved it.
