Baking Meatloaf
When it comes to baking your meatloaf, you have a couple of options. You can bake it the traditional way in a loaf pan or bake it on a foil lined baking sheet.
Meatloaf Temperature
The USDA recommends an internal temperature of 160ยฐF when cooking meatloaf. This should be enough to kill the salmonella. You can take the meatloaf out of the oven at around 150ยฐF and let it rest for 10 minutes. Check the internal temperature again before slicing & serving.
Serving Suggestions
Serve this delicious turkey meatloaf with a side of Mashed Potatoes, Sweet Potato Planks, or even Creamy Polenta with Parmigiano-Reggiano.

Ingredient Substitution
If you prefer to use something other than Gouda Cheese, you can substitute it for any other type of cheese that melts well. Just keep in mind that the type of cheese you select will alter the flavor of the meatloaf. Mozzarella Cheese would be my first choice.
Recipe FAQ’s
To be safe, I recommend letting the internal temperature reach approximately 160ยฐF. Make sure to let the meatloaf rest for about 10 minutes before slicing.
No! Once the meat mixture is done, you can shape it into a log and bake it on an aluminum foil lined baking sheet.
No worries. Just substitute for any good melting cheese like mozzarella.
Gather your Ingredients
You will need the following ingredients to make this Gouda Stuffed Turkey Meatloaf recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Lean Ground Turkey – I like to use 93/7 from Jennie-O for this meatloaf recipe
- Gouda Cheese – I shred mine but you can dice it up if you prefer
- Egg Yolk – the egg yolk will act as a binder
- Bread Crumbs – bread crumbs also act as a binder so the meat doesn’t fall apart
- Milk – I use 2% milk for this recipe
- Garlic Powder, Onion Powder, Salt and Pepper – this adds a bit of seasoning to the meatloaf
- Dijon Mustard – adds a little bit of “tang” to help cut through the richness of the gouda
- Worcestershire – adds a little umami to the meatloaf
