A Horseradish Meatloaf with a Kick! I wish I would’ve started making this delicious meatloaf years ago. A keeper for sure!

Horseradish Meatloaf

This Superb Horseradish Meatloaf is not for the faint of heart! While it includes all the ingredients you would typically find in a meatloaf, this gourmet meatloaf also includes some horseradish (hence the name of the dish) as well as a bit of chili sauce for good measure.

When it comes to baking your meatloaf, you have a couple of options. You can bake it the traditional way in a loaf pan or bake it on a foil-lined baking sheet.

Depending on how lean your ground beef is, you may find the meatloaf sitting in grease. One way to avoid this is to shape the meat mixture into the shape of a loaf and bake it on a baking sheet. This will allow the grease to run off into the pan.

Our friends over at the USDA recommend an internal temperature of 160°F. This should be enough to kill salmonella.

You can take the meatloaf out of the oven around 150°F and let it rest for 10 minutes. Check the internal temperature again before slicing & serving.

How to Handle Raw Beef

  • Thaw frozen ground beef on a plate on the lowest shelf of the refrigerator, to avoid dripping onto other foods.
  • Keep raw and ready-to-eat meats separate.
  • Wash hands thoroughly before and after handling raw ground beef. Wash cutting boards, bowls, and utensils used to prepare raw ground beef with hot soapy water and rinse well.
  • Use separate plates to carry raw ground beef patties to the cooking area and cooked patties to the serving area.
  • Use a Thermometer to ensure Ground Beef Reaches the Safely Cooked Internal Temperature of 160°F.

You will need the following ingredients to make this Superb Horseradish Meatloaf recipe (see recipe card for quantities): Soda Crackers, Celery, Yellow Onion, Horseradish, Dijon Mustard, Chili Sauce, Egg, Worcestershire Sauce, Salt, Ground Black Pepper, Lean Ground Beef and Ketchup.

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, add the crushed soda crackers, chopped celery, diced onion, horseradish, mustard, chili sauce, beaten egg, Worcestershire, salt and pepper.
  3. Crumble ground beef into the bowl and mix well until all the ingredients are combined.
  4. Put ground beef mixture into a greased loaf pan. Spread the ketchup over the top of the meat mixture.
  5. Bake for 55 minutes or until the meat is no longer pink and the internal temperature is around 150-155°F. Let stand for 10 minutes before cutting and serving.

Ingredients
 

  • 1 Cup Soda Crackers, Crushed
  • ½ Cup Celery, Chopped

  • 2 Tbsp Dijon Mustard
  • 2 Tbsp Chili Sauce
  • 1 Egg, Beaten
  • 1 ½ Tsp Worcestershire Sauce

  • ¼ Tsp Ground Black Pepper
  • 1 ½ lbs Lean Ground Beef
  • ½ Cup Ketchup

Instructions
 

  • Preheat oven to 350°F.

→ You can substitute the crushed soda crackers for crumbled bread soaked in milk or crushed tortilla chips.
→ Use ground beef with less than 10 grams of fat for the best outcome.

    I substituted Panko because I didn’t have any crackers, and I left the catch up off the top to save on some sugar. It was one of the best meatloaf recipes I have tried. Definitely a keeper!
