Lemon Pepper Tuna Fish Sandwich

This Lemon Pepper Tuna Fish Sandwich is not only delicious but also very healthy. The wonderful flavor comes from the combo of the lemon and arugula.

Lemon Pepper Tuna Sandwiches

I grew up eating Tuna fish sandwiches. Not fancy ones like this Lemon Pepper Tuna Fish Sandwich recipe. If memory serves, my mom used to use Tuna in oil.

Now that I am trying to eat as healthy as I can, I use Tuna in water. I’ve never compared “the numbers” but I have to think the tuna in water is a little better for you. (Note to Self: compare the nutritional information between the two)

Lemon Pepper Tuna Sandwiches

Like any recipe of this type, you really don’t need many skills in the kitchen to pull this recipe off. The hardest part might be grating the carrots? But you can already buy them like that? Zesting the lemon? I guess if you don’t have a lemon zester.

Lemon Pepper Tuna Sandwiches

This tuna fish sandwich recipe does not taste like your typical tuna fish sandwich. Maybe I was a little generous with the lemon juice but these sandwiches have a nice lemon flavor to them which pairs nicely with the tuna.

Continuing with the trend to try and eat as healthy as possible, I used 6 Grain Bread. That was a great pick as these sandwiches were delish! Obviously, you can use whatever kind of bread you prefer.

Lemon Pepper Tuna Sandwiches

I think this is the first time I use baby arugula in a sandwich. I usually take the easy way out and top my sandwiches with lettuce.

But this time I used Baby Arugula. If you’ve never had arugula before, I would describe the taste as “peppery”. Combine the arugula with the lemon tuna mixture and you have Lemon Pepper Tuna Fish Sandwiches.

This is also a great recipe that you can easily make on a camping trip like I recently did on a recent trip to Bass Lake near Yosemite.

You will need the following ingredients to make this Lemon Pepper Tuna Fish sandwich recipe (see recipe card for quantities): White Tuna in Water, Carrots, Mayonnaise, Fresh Parsley, Shallots, Lemon Juice, Lemon Zest, Ground Black Pepper and Baby Arugula.

  1. In a mixing bowl combine tuna, carrot, mayonnaise, parsley, shallot, lemon juice, lemon zest, and pepper and toss until mixed.
  2. Assemble the sandwich adding the tuna mixture to your favorite bread. Top with Baby Arugula.

Ingredients
 

  • 15 oz White Tuna in Water, drained
  • ½ Small Carrots, grated
  • 2 Tbsp Mayonnaise, Reduced Calorie or Fat-Free
  • 2 Tbsp Fresh Parsley, chopped
  • 1 Shallots, finely chopped
  • 1 Tbsp Fresh Lemon Juice
  • 1 Tbsp Lemon Zest
  • ½ Tsp Ground Black Pepper
  • ½ Cup Baby Arugula, lightly packed

Instructions
 

  • In a mixing bowl combine tuna, carrot, mayonnaise, parsley, shallot, lemon juice, lemon zest, and pepper and toss until mixed.
  • Assemble sandwich adding the tuna mixture to your favorite bread. Top with Baby Arugula.

    This recipe for tuna salad sandwich is very tasty. My family loved it. The only difference was that I toasted the bread. But apart from that this recipe is a keeper in my house.
