I’ve had a lot of luck cooking various things in my Sous Vide and decided to try making Chicken Wings in it. I can tell some of you are rolling your eyes, but not everyone has a grill or deep fryer, etc. Just another method for making Chicken Wings that you can add to your arsenal.

You are probably asking yourself how can wings get nice and crispy in a hot water bath? Well, like many sous vide recipes that involve meat (like steaks, etc.), once they are done cooking, you sear them in a skillet, then toss them in your favorite wing sauce.

So why use a Sous Vide in the first place if I still have to fry them up in a skillet? Simple. Cooking the wings in the Sous Vide will guarantee they will be cooked to perfection. No under cooked or over cooked wings when you use this method.

Unfortunately, this “benefit” comes at a price. And that is time. Cooking wings in the Sous Vide will take about 45 minutes. This means that if you are in a hurry, skip the Sous Vide. If you have the time to wait for them to cook, you will enjoy perfectly cooked wings every time.

Recipe Tips

  • If you are using frozen wings make sure you let them thaw completely before putting them in the sous vide. If not, they will take longer to cook. I like to let my wings sit at room temperature after seasoning them so I avoid this issue.

Recipe FAQ’s

Can I use Frozen Wings?

You sure can, but make sure you thaw them before adding them to the water bath.

Do I have to use Vegetable Oil?

No you can use Olive Oil, Canola Oil or any other kind of high-heat oil

Can I deep fry them instead of frying them?

Yes. Heat the deep frying oil to 375ยฐF and fry for no more than 2 minutes.

You will need the following ingredients to make this chicken wings recipe using sous vide. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

Chicken Wings – if you are using frozen wings make sure you thaw them before using
Salt & Pepper – a little seasoning for the wings
Vegetable Oil – the oil is used to crisp up the wings in a skillet after the water bath

  1. Preheat the Sous Vide to 140ยฐF.

  2. Lightly season the chicken wings with salt and pepper. Place the seasoned wings in a large sous vide bag and seal using the water immersion technique.

  3. Place the bag in the water bath and set the timer for 45 minutes.
  4. Remove the bag from the water bath. Remove the wings from the water bath and pat very dry with paper towels.
  5. Add the vegetable oil into a large skillet or dutch oven. Heat the oil over medium-high heat.

  6. Add the wings and fry until golden brown, 1 to 2 minutes. As soon as the wings come out of the skillet, transfer them to a bowl with the sauce and toss to coat.
