When I was a kid, my parents would bring me to a restaurant that had one of those glass display cases with all those wonderful eye-catching desserts. For some reason. even as a kid, the Lemon Meringue Pie always caught my attention.

I recall the first time I saw lemon meringue pie with its fluffy, lightly browned meringue topping. I just knew I had to have a piece of this awesome looking pie.

Unfortunately, as a kid, I did not appreciate the sour taste of the lemon filling. Fast forward to today. I absolutely LOVE a good Lemon Meringue Pie so at some point, I just had to make one for myself in the comfort of my own kitchen.

Most lemon meringue pie recipes are essentially identical but I wanted to come up with a version of this awesome pie that would not only be easy to make but also be the tastiest.

Super Easy Lemon Meringue Pie

You will need the following ingredients to make this Super Easy Lemon Meringue Pie recipe (see recipe card for quantities): Pie Shell, White Sugar, Cornstarch, Lemon Juice, Water, Eggs, Unsalted Butter and Cream of Tartar.

  1. Preheat oven to 350°F.
  2. In a saucepan, combine 1 1/3 cups sugar and cornstarch. Add lemon juice and mix.
  3. In a small bowl, beat egg yolks. Once well beaten, add egg yolks to the lemon mixture.
  4. Gradually add the water to the lemon mixture, stirring constantly. Over medium heat, cook and stir until the mixture boils and thickens. This should take about 10 minutes.
  5. Once the lemon mixture has thickened, remove from heat. Add the butter to the lemon mixture and stir until the butter has completely melted.
  6. Pour lemon mixture into your prepared (follow directions on package) pastry shell.
  7. Using a stand mixer or a small mixing bowl and electric beaters, beat the egg whites with cream of tartar until soft peaks form. Gradually add the remaining 1/3 cup sugar, beating until stiff but not dry.
  8. Spread the meringue on top of the lemon filling in the pie shell, sealing carefully around the edge of the pie shell.
  9. Bake for 12 to 15 minutes or until meringue peaks are golden brown. Remove from the oven and let cool. Chill before serving.
