I was getting tired of always making the same types of casseroles so decided to give this Zucchini Sausage Casserole a try.

What I especially like about this recipe is how easy it is to make with only a few simple ingredients.

Not only that but only a few minutes to prepare and 30 minutes in the oven which makes this casserole a good candidate for those busy weeknights!

If you don’t have any ground sausage on hand or just don’t care for the taste, you can substitute for some Ground Turkey or even some Lean Ground Beef.

Zucchini Sausage Casserole

Add a layer of shredded cheese to the top layer. Use a good melting cheese like Mozzarella or Monterey Jack Cheese.

You can also use less stuffing for this recipe if you want. Make sure you adjust the amount of melted butter if you do use less stuffing.

Zucchini Sausage Casserole

You will need the following ingredients to make this Zucchini Sausage Casserole recipe (see recipe card for quantities): Italian Sausage, Zucchini, Condensed Cream of Chicken Soup, Sour Cream, Chicken Flavored Stuffing Mix and Unsalted Butter.

  1. Preheat oven to 350ºF. Lightly grease a 9 x 13 baking dish. Set aside.
  2. In a skillet, cook the sausage over medium heat until brown. Drain off fat. Return the sausage to the skillet.
  3. Halve the zucchini lengthwise, cut crosswise into 1/4 inch pieces. Add the zucchini to the sausage mixture in the skillet.
  4. In a small bowl, combine the cream of chicken soup and sour cream. Stir into the sausage mixture.
  5. In a large bowl, combine the stuffing mix and melted butter.
  6. Spoon half of the stuffing mixture into the prepared baking dish. Spread sausage mixture over stuffing.
  7. Spoon the remaining stuffing mixture evenly over the sausage mixture.
  8. Bake covered for about 30 minutes or until heated through.
