When I get bored of French Fries, potato wedges is the next best thing. It’s amazing how many amazing things can be made in an Air Fryer and these potato wedges are perfect for the air fryer.

The seasoning included on the recipe card is from Emeril and totally optional. Feel free to use whatever seasonings you prefer. At a minimum, you should use some salt & pepper.

Skin on or Skin off

Peeling the potatoes is a personal preference. While some people prefer the rustic look and added fiber that comes from leaving the skin on, others may prefer the texture and appearance of peeled potato wedges. Ultimately, it depends on your taste preference and the desired outcome of your air fryer potato wedges!

You will need the following ingredients to make this Potato Wedge recipe in your Air Fryer. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Russet Potatoes – Peeled or not, your preference. See note above
  • Olive Oil – The best quality you can get (within reason)
  • Paprika
  • Sea Salt – Regular salt is fine
  • Garlic Powder
  • Onion Powder
  • Dried Oregano
  • Ground Thyme
  • Ground Black Pepper – Freshly ground if possible
  • Cayenne Pepper – use less or omit for little to no heat
  1. Scrub clean the potatoes with a brush or peel the potatoes if you prefer.
  2. Slice the potatoes into 1/4 inch to 1/2 inch thick wedges.
  3. Add the potato wedges to a large bowl and cover with hot water. Soak the potatoes for 15-20 minutes.

  4. If necessary, preheat the air fryer to 400°F.
  5. In a small bowl, whisk together all the seasoning ingredients. Toss the potato wedges in the olive oil and sprinkle with the seasoning.

  6. Place the potatoes in the air fryer tray. Depending on the size of your air fryer you may need to do the wedges in batches.

  7. Air Fry for 19-20 minutes. Remove the potatoes from the basket.
  8. Repeat the process for the second batch of potatoes if needed.

Seasoning

  • 1 Tbsp Sea Salt
  • 1 Tbsp Garlic Powder
  • 1 ½ Tsp Onion Powder

  • 1 ½ Tsp Ground Thyme
  • 1 Tsp Ground Black Pepper
  • 1 Tsp Cayenne Pepper, or to taste
