A delicious Banana Bread Muffins with Chocolate Chips recipe that you have to try! Fast & Easy to make and absolutely delish!
I love Banana Bread. I love it so much that I’ve posted quite a few Banana Bread recipes in the past. While I could’ve made a regular loaf this time around, I decided to make these Banana Bread Muffins with Chocolate Chips as we were headed out on a road trip and it’s much easier to eat a muffin while driving than a big slice from a loaf. At least that’s my excuse.
When you have made as many mistakes as I have, then you can be as good as me.
Now I don’t want to get into the debate of nuts or no nuts in Banana Bread but this recipe yields about 24 nice sized muffins. So I decided to make half with nothing in them and the other half with chocolate chips. Prefer nuts to chocolate chips, easy substitute. For me though, there is something about the flavor of bananas and chocolate that is simply irresistible.
Next time I might make mini muffins. Can you imagine bite-size Banana Bread treats? The problem is I would probably eat too many and make myself sick. Wouldn’t be the first time!
How to make Banana Bread Muffins with Chocolate Chips.
1- Preheat oven to 350F.
2- In a large bowl, combine vegetable oil and sugar. Add beaten eggs and mashed bananas and set aside.
3- In another bowl, mix together flour, salt, stir and stir into oil mixture. Add lemon juice and baking soda. Fold in chocolate chips.
4- Spoon into paper-lined cups filling 2/3 full. Bake for 25 minutes.

- 1 Cup Vegetable Oil
- 1 Cup White Sugar
- 2 Egg(s) Beaten
- 3 Bananas Mashed
- 1 1/2 Cups All Purpose Flour
- 1/2 Cup Whole Wheat Flour
- 1/2 Tsp Salt
- 3 Tbsp Lemon Juice
- 2 Tsp Baking Soda
- 1 Cup Semi-Sweet Chocolate Chips
