Beef Enchilada Fideo Skillet

After making my delicious Traditional Mexican Sopa de Fideos recipe I found myself with a bunch of Fideo pasta that I didn’t want to go to waste so I whipped up this Beef Enchilada Fideo Skillet.

As you would expect, this recipe is super easy to make. I mean super easy as in even a beginner in the kitchen can easily make this recipe.

What is Fideo Pasta

If you are unfamiliar with Fideo Pasta, they are thin, short noodles. It may be a little difficult to locate depending on where you live but don’t worry, you have options! you can substitute for some vermicelli or angel hair pasta. You just need to break them into short pieces before using them.

While I used Lean Ground Beef when making this recipe, you can substitute for some Lean Ground Turkey to make it a little healthier. Both options are delicious!

How to Handle Raw Beef

  • Thaw frozen ground beef on a plate on the lowest shelf of the refrigerator, to avoid dripping onto other foods.
  • Keep raw and ready-to-eat meats separate.
  • Wash hands thoroughly before and after handling raw ground beef. Wash cutting boards, bowls, and utensils used to prepare raw ground beef with hot soapy water and rinse well.
  • Use separate plates to carry raw ground beef patties to the cooking area and cooked patties to the serving area.
  • Use a Thermometer to ensure Ground Beef Reaches the Safely Cooked Internal Temperature of 160°F.

As far as the enchilada sauce is concerned, use whatever brand you prefer. Or if you have a good homemade recipe, feel free to use that as well! Just remember that enchilada sauce usually comes in different heat levels so make sure you pick the right one!

Tips

  • If a more liquid consistency is desired, add 2 cups water. Beef broth works as well.
  • Make sure you stir the mixture often so it doesn’t stick to the bottom of the skillet

You will need the following ingredients to make this Beef Enchilada Fideo Skillet recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Lean Ground Beef – you can also use ground turkey if you prefer
  • Yellow Onion – you can also use a sweet brown onion or a white onion for this recipe
  • Red Enchilada Sauce – hot or mild. your choice!
  • Water – used to thin out the red enchilada sauce
  • Fideo Pasta – you can also break up some vermicelli or angel hair pasta if you can’t find Fideo at your local grocery store
  1. In large skillet, over medium-high heat, brown the ground beef and onion until the meat is no longer pink and the onion is tender. Drain any excess juices.
  2. Add the enchilada sauce, water and fideo pasta to the skillet. Bring to a simmer, reduce heat, cover and cook for 10 minutes, stirring frequently.
  3. Optionally garnish with shredded cheese and sour cream.

  • 1 Cup Yellow Onion, diced
  • 28 oz Red Enchilada Sauce
  • ½ cup Water
  • 6 oz Fideo Pasta
Toppings (optional)
  • 1 Cup Mexican Blend Cheese, shredded
  • Sour Cream

Instructions
 

  • In large skillet, over medium-high heat, brown the ground beef and onion until the meat is no longer pink and onion is tender. Drain any excess juices.
  • Add the enchilada sauce, water and fideo pasta to the skillet. Bring to a simmer, reduce heat, cover and cook for 10 minutes, stirring frequently.
  • Optionally garnish with shredded cheese and sour cream.

    I’ve tried both Fideo recipes on this site and I love them both. I am a big fan of Mexican food and had no idea that Fideo was a thing. I’ll definitely be making these more often as one of our regular dinners.
