This Mexican Sopas de Fideos recipe is a comforting noodle soup popular in various Latin American countries. This particular version is of the Mexican variety.
There are also variations of this recipe from Spain, Peru, Cuba, Argentina and a few other countries.
The key ingredient in this soup recipe is the noodles. This soup is traditionally made with Fideos Pasta which are thin, short noodles. It may be a little difficult to locate depending on where you live but don’t worry, you have options!
Ingredient Substitution
If you can find Fideos Pasta at your local grocery store you can substitute for some vermicelli or angel hair pasta. You just need to break them into short pieces before using them.

Gather your Ingredients
You will need the following ingredients to make this Mexican Sopa de Fideos recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Fideo Pasta – or broken vermicelli noodles or angel hair pasta
- Vegetable Oil – Canola Oil or Olive oil will also work
- Yellow Onion – White onion or a sweet brown onion is fine. Just make sure they are finely chopped
- Garlic Cloves – try to use fresh garlic as much as possible
- Low Sodium Chicken Broth – if you use regular sodium chicken broth reduce the amount of additional salt you add
- Diced Tomatoes – you can use canned diced tomatoes for this soup recipe
- Ground Cumin, Chili Powder, Salt and Pepper – seasoning for the soup
- Fresh Cilantro – this is an optional garnish for the soup. Many people don’t like the taste of cilantro so you can skip this ingredient
- Lime Wedges – this soup is traditionally served with lime wedges for those who want to add ta tangy flavor to the soup
How to Make Mexican Sopa de Fideos
- In a large pot, heat the vegetable oil over medium heat. Add the fideos and toast them until they are golden brown, stirring frequently to prevent burning.
- Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent and fragrant.
- Stir in the chicken broth, diced tomatoes, cumin, chili powder, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat and let the soup simmer for about 10-15 minutes, or until the noodles are tender and the flavors have melded together.
- Optionally garnish with fresh cilantro, and serve with lime wedges on the side.
