Not only are these Black Bean Burritos delicious, but they are also pretty healthy. Black beans are high in protein and fiber and they are also rich in antioxidants.

You can also easily modify this burrito recipe slightly to be Vegan Friendly. All you need to do is leave out the Queso Fresco or substitute for a vegan-friendly cheese.

My wife is always asking me to make healthier food when I can so I figured why not make these healthy black bean burritos? Simple and easy to make which makes this recipe perfect for those busy days.

When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F.

You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

You will need the following ingredients to make this Black Bean Burrito recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Refried Black Beans
  • Taco Seasoning
  • Flour Tortillas – use a good brand tortilla like Mission or Guerrero
  • Tomato
  • Red Onion – if you must, you can substitute for a yellow onion
  • Green Bell Pepper – or you can use any mild green pepper you prefer
  • Queso Fresco
  • Avocado – make sure the avocado is ripe
  1. In a small bowl, combine the black refried beans and the taco seasoning.
  2. Spread the refried black beans over the tortilla, about 1/3 cup per tortilla. Sprinkle each evenly with the tomato, onion, green pepper, queso fresco and avocado.

  3. Assemble the burrito by folding the right and left sides of the tortilla over the meat mixture. Then roll the bottom of the tortilla up over the bottom third of the filling. Fold in the top over the mixture.
  4. Optionally serve the burritos with salsa and sour cream.

Ingredients

Instructions

  • In a small bowl, combine the black refried beans and the taco seasoning.
