These Butterscotch Drop Cookies are to die for. Only 3 simple ingredients needed!

These No-bake drop cookies are a convenient and quick alternative to traditional baked cookies. All you need is a double-boiler!

If you are not familiar with a double boiler, it’s two stacked pots where the lower pot holds simmering water, and the upper pot, placed above the water, contains the food you’re cooking.

If you don’t own a double boiler, don’t worry. You can easily create your own at home. Fill a saucepan with a couple of inches of water. Just make sure the water level is below the bottom of the bowl placed on top.

Place the saucepan on the stove and bring the water to a simmer over medium heat. Once the water is simmering, reduce the heat to low. Put a heatproof bowl on top of the saucepan.

Add the ingredients you want to melt or cook in the bowl. The indirect heat from the simmering water will gently heat the contents of the bowl.

Alternatively, you can melt the butterscotch chips and peanut butter in a microwave-safe dish. I prefer the double-boiler method as it’s pretty fail-proof.

You can substitute the butterscotch chips for some chocolate chips, or white chocolate chips, or for all you peanut fans you can use some Reeses Peanut Butter Chips!

You will need the following ingredients to make this Butterscotch Drop Cookies recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Butterscotch Chips
  • Peanut Butter – I like to use creamy peanut butter
  • Corn Flakes
  1. Melt the butterscotch chips and peanut butter in a double boiler. Stir to blend.

  2. Remove from the heat and gently fold in Corn Flakes, ensuring all the Corn Flakes are well coated.

  3. Drop by the spoonful on a wax paper-lined baking sheet. Chill until set.

  • Drop by the spoonful on wax paper lined baking sheet. Chill until set.
